  1. Cut your hard boiled eggs in half lengthwise, remove yolks to a separate bowl and place the egg halves on a large plate.
  2. To the bowl, add the yogurt, horseradish, pickle juice, mustard, dill, salt, and pepper. Mix with a fork until creamy, taste and adjust salt and pepper, or even horseradish.
  3. Place the yolk mixture into a zip lock bag, snip off a very small corner of the bag, squeeze the yolk mixture into the egg halves on the plate. Garnish with fresh dill, chill, and serve.

  1. In a large bowl mix everything together except the peas. When mixed, add the peas and stir to coat them.
  2. Cover and refrigerate for at least 3 hours or more before serving. Leftovers can be kept covered in the fridge for several days.

  1. In a large bowl, prepare the meatballs. Combine the chicken, egg, rice, onion, garlic, salt and pepper.
  2. Just mix with a large spoon.
  3. Roll the meatballs into 1 to 1 1/4 inch balls, ice cream scoop would work and I will get one to do this to verify the size. Roll each ball in flour and set on a lightly floured plate or surface.
  4. Heat a large pan over medium heat and add the oil. Use a regular stainless pan if you want a darker sauce or feel free to use a non stick pan which will give a lighter color sauce, this does not change the flavor of the sauce. When the pan is hot, add the meatballs and cook for 4 minutes without turning them, then flip over with tongs and cook 3 more minutes or until nice and golden brown and cooked through. Remove to a plate.
  5. To make the sauce, using the same pan on medium heat add the butter and when melted whisk in the flour and whisk until golden in color, then add the stock and whisk until it starts to thicken then whisk in the Greek yogurt (or sour cream or heavy cream) and season to taste, a good starting point would be 1/2 teaspoon paprika, 1/8 teaspoon pepper, and salt to taste.
  6. Bring the sauce to a simmer and whisk until the sauce thickens, remember the sauce will also thicken as it cools. When the sauce will coat a meatball, add all the meatballs to the pan and turn each one to coat with the sauce.
  7. Serve with mashed potatoes or pasta once all the meatballs have heated and sprinkle with parsley for garnish.
Recipe Notes

Chicken thighs (you would grind or mince yourself, as I have never seen ground chicken here) would cost about 40 Baht/500 grams. For 4 servings, this is about 28 cents per serving. Outstanding value.

  1. Add the shrimp to a bowl, season with the spices listed for the shrimp, add a splash of olive oil as well, let this marinate while you make the sauces.
  2. Meanwhile, to make the Mayo Dressing, mix together the combining mayo, yogurt, juice of half a lime, orange juice, bell peppers, red onion, a dash of chili pepper, salt and pepper. Set aside.
  3. For the Lime Sauce, combine cilantro, garlic, juice of one lime, a splash of red wine vinegar, olive oil, and salt in a blender. Or mix by hand. Set aside.
  4. Cook the shrimp in a hot pan with a splash of olive oil, once they begin to brown slightly and turn opaque, turn them and cook for 1-2 minutes more. Remove from pan and place on paper towels to drain and cool.
  5. While the shrimp is cooking, halve, pit, and scoop out the whole avocado from the skin using a large spoon. Place lettuce leaves on each plate, top with each piece of avocado.
  6. When the shrimp has cooled, roughly chop and mix into the Mayo Dressing.
  7. Fill avocados with the shrimp filling equally divided between the 4 pieces. Drizzle on the Lime Sauce, serve as an appetizer or side.
Recipe Notes

Shrimp prices can vary a lot, from farm raised to wild caught, choose wisely. Small White Shrimp from Tesco will cost about 80 Baht/500 grams. For 4 servings, this is about 60 cents per serving. Keep in mind, many of these ingredients can be locally sourced.

  1. Put the flour and yogurt in a large bowl and mix with a fork until a shaggy dough forms. The dough may appear dry and crumbly at first, but it will come together as you mix it. Turn the mixture out onto a lightly floured work surface and knead until the dough is smooth and slightly elastic, about 8 minutes, dusting with more flour if necessary. If the dough feels too dry, add water, a tablespoon at a time and continue kneading until it is soft and pliable. Divide the dough in half, roll into balls and then use a rolling pin to roll out into two 10-inch pizzas. Dust a baking sheet or pizza peel with more flour or coarse cornmeal and place a circle of dough on top.
  2. Proceed with a pizza of your choice using any recipe you like.

  1. Wash and pat dry the chicken drumettes and or wings and pat them dry with a paper towel and place in a large bowl. Add to them 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, the paprika, garam masala, turmeric, coriander, cumin, and cayenne, and using your hands, mix/rub the spices into the chicken; set aside for a moment.
  2. In a small bowl, combine the yogurt, lemon juice, garlic, ginger, and Sriracha, and mix to blend, then pour this mixture over the chicken, rubbing it into the chicken, cover and refrigerate and allow it to marinate for at least 2 hours, up to overnight.
  3. When ready to bake, preheat your oven to 230 C, line a baking sheet with foil, and place a wire rack over the baking sheet. Remove the chicken from the yogurt marinade, and allow the excess to drip off; place the wings onto the wire rack, and bake in the oven for about 25 minutes, until slightly charred and crisp.
  4. Serve garnished with a some cilantro leaves, and the Cool Minted Yogurt Dipping Sauce on the side.
Recipe Notes

Drumettes are called Chicken Wing Sticks at Tesco (I get pricing from Tesco), and are about 80 Baht/kilo. Full wings are 90 Baht/kilo. Going with 750 grams of drumettes, this is about 88 cents per serving for 2 servings.

  1. Preheat your oven to 180 C. Get out your muffin pan and line with muffin papers.
  2. Mix all the dry ingredients together except the chocolate chips.
  3. Mix all the wet/other ingredients together.
  4. Pour the wet ingredients into the dry ingredients. Swiftly mix until just combined (VERY IMPORTANT: DO NOT OVER MIX). Add in the chocolate chips. Give it a rough toss to mix and scoop the batter into a muffin pan lined with paper liners. Fill each cell to almost full.
  5. Bake in the preheat oven for 25 minutes until they have rose and are golden brown, they are done when a toothpick inserted in the center comes out clean. Remove from the muffin pan and set muffins on a rack to cool. Best eaten the day they are baked.

  1. Cook pasta in boiling water until tender, drain and set aside.
  2. Meanwhile, preheat your oven to 180 C and lightly grease with butter, a state of Kansas baking dish (9x13 inches).
  3. In a large pan, heat olive oil over medium high heat. Cook onion, all the bell pepper for 2 minutes, add tomatoes and continue to cook until onion and peppers are crisp and tender and liquid from the tomatoes has thickened and mostly evaporated, about 5 minutes. With a slotted spoon, remove vegetables from pan and set aside, drain out the oil.
  4. In same pan, melt butter over medium heat. Sprinkle in garlic and flour and cook, whisking often until flour is golden brown, about 2 minutes. Gradually pour in milk, whisking constantly. Cook until sauce thickens, about 6-7 minutes. Remove from heat and stir in red pepper flakes, salt and oregano. Stir in Greek yogurt, mozzarella, add drained pasta and vegetables, stir to coat.
  5. Roughly chop 2/3 of the ham, and or bacon, stir into pasta mixture, reserving remaining ham/bacon. Spoon pasta into prepared baking dish, then scatter olives and remaining ham/bacon over top. Sprinkle with Parmesan cheese and bake until hot and bubbly, about 20 minutes. Let rest a few minutes before serving.
