For Food Processor Use
  1. Put the fish in your food processor and process until coarsely chopped, then add the curry paste, egg, sugar, salt, and corn starch and process until well blended. Stir in the beans, cilantro, and kaffir lime leaves (if using those).
For Meat Grinder & Hands Use
  1. Run the fish through your meat grinder using the coarse plate (the wagon wheel). With the ground fish in a mixing bowl, add the curry paste, egg, sugar, salt, and corn starch and mix with your hands to completely mix everything together. Stir in the beans, cilantro, and kaffir lime leaves (if using those).
Continuing On...
  1. Cover the bowl with plastic wrap and place in the fridge for 30 minutes.
  2. After 30 minutes have passed, get the bowl and shape fish mixture in balls then flatten to make the fish cakes.
  3. Heat the oil in a non stick pan, when the oil is hot, add the fish cakes (in batches) and cook for about 3 minutes on each side or until golden brown.
  4. Garnish with lime wedges. Serve as a side with any Thai main dish, such as a curry over rice.

When I say long beans, I mean green beans, taste the same, can be a bit tough depending how old/long they are, and can be 1 to 3 feet long. Highly recommended by a good friend to cook these in a pressure cooker for some amazing beans, and they are! I made these on 7 Feb 2018, and this will be the only way I prepare them from now on. Follow all safety requirements for your pressure cooker.

  1. For viewers in Asia, these are common in stores and markets, for viewers in the US and Canada, you may be able to find these at Asian markets. The longest beans in these two bundles is 21 inches. I only used 12 beans in this recipe, so 12 is a good number for 4 to 6 servings as a side dish.
  2. Place everything into your slow cooker and give it a stir to mix everything up.
  3. Place on and lock the lid, heat over high heat to bring cooker up to pressure, then reduce heat to maintain full pressure. Once at full pressure and the jiggler is making noise and moving, start counting for 3 to 4 minutes (even 5 minutes if you like really soft green beans).
  4. When the time is up, turn off and move the cooker to an unused burner to cool for a natural release of pressure, about 10-15 minutes.
  5. When it is safe with your pressure indicating zero pressure, remove the lid, drain the beans, put beans in a serving bowl, serve as a side dish.
  6. Served as a side dish with fish.

Low cost.

Variant: 1. Add some pork, beef, or chicken broth powder to the beans, about 1/2 tablespoon, excellent flavor.

  1. Layer the ingredients in the slow cooker starting with the potatoes.
  2. Then add the long beans.
  3. Then add the sausage. Pour the broth over the top. For this dish, I used 240 grams of Italian sausage.
  4. And another 270 grams of Vietnamese sausage, it is just a recipe, not set in stone, feel free to use sausage of your choice.
  5. Cover and cook on Low setting for 6 to 8 hours. Do not remove the cover before 6 hours. When the potatoes are fork tender, you can serve after that or switch to Warm to serve later. Add salt and pepper to taste before serving.
  6. Served with fresh baked bread on the side, perfect meal.
Recipe Notes

Going with my purchase of Cumberland sausage at 178 Baht. For 4 servings, this is about $1.31 per serving.

Variants 1. Use other types of sausage, Cumberland would be a good choice, Italian, Bangers, even Vietnamese sausage would be good in this. 2. Use pork or chicken stock in place of the vegetable stock.

  1. Preheat your oven to 180 C.
  2. Cut the long beans into 1 to 1 1/2 inch pieces, steam until cooked but crisp, about 3 to 5 minutes, drain.
  3. In a 8x8 inch glass baking dish, mix together the soup, milk, and cooked long beans. Place in the oven and cook for about 20 to 25 minutes, then sprinkle the french fried onion over the top and continue baking for another 5 minutes.
  4. Serve as a side with any main dish.

  1. Use a rice cooker to cook the rice, to the cooker add the rinsed rice, 1 teaspoon of salt, bay leaves, curry powder, and the chicken stock powder, add the appropriate amount of water and set to the Cook mode. When the cooker switches to Warm, spread the rice out on a large tray to cool, discard the bay leaves.
  2. Using a mortar and pestle, pound into a paste, the garlic, ginger, parsley, and a little water, as need to form a smooth paste. Set aside.
  3. In a mixing bowl, add the shrimp, season with a pinch of salt, 1/4 teaspoon white pepper, 1/2 teaspoon of the garlic paste, and mix to coat all the shrimp. Set aside.
  4. In another mixing bowl, add the chicken, and season with 1/4 teaspoon salt, 1/4 teaspoon white pepper, 1/2 teaspoon of the garlic paste, and mix into the chicken to coat all the pieces. Set aside.
  5. Heat some oil in a large pot, add the shrimp and cook, turning them after about two minutes and cook for another 2 minutes, until the shrimp are pink and cooked through, do not overcook them as that makes for tough shrimp. Remove when cooked through.
  6. Same pot, now add the chicken, also just cooking for about 4 minutes, turning them at about 2 minutes, until cooked through, remove the chicken from the pot.
  7. Same pot, heat more oil if needed, add the onion and spring onion and saute until the onion is translucent then stir in the remaining garlic paste and cook for about 2 minutes. Add the carrot, long beans, corn, and peas and stir to mix well.
  8. Stir in the chicken and shrimp, then add the rice and stir until well mixed, let this cook for just a minute or two to heat everything through, serve.

Figure 35 Baht for the chicken and maybe 100 Baht for the shrimp. For 10 servings, this is about 40 cents per serving.

  1. Preheat your oven to 190 C. Lightly butter a 9x13 baking dish.
  2. Season the chicken breasts on both sides with salt and pepper, lemon pepper would be a bonus.
  3. Heat a non stick pan on medium heat with about 1 tablespoon of olive oil. When the oil is hot, add the chicken breasts, brown on each side then remove from pan and reduce heat to medium low.
  4. While the chicken is cooking, steam the long beans for 3 to 5 minutes.
  5. Add about 3 tablespoons of olive oil to the pan, when heated, add the garlic and cook for about 1 minute until nice and fragrant then add the tomatoes and cook those until just warmed through, add in the steamed long beans, season with salt and pepper to your taste, add the oregano, mix then remove from heat. Pour the tomato and bean mixture into the prepared baking dish.
  6. Top with the Feta cheese, reserving about 1 tablespoon. Place the chicken breasts on the top, top each piece of chicken with a lemon slice.
  7. Bake for 15-20 minutes or until the chicken is cooked through.
  8. Remove from oven, remove the chicken breasts, divide the tomatoes and long beans between 4 plates, slice each breast into about 3-5 pieces and place those using a spatula to pick up all the pieces at one time on top of the vegetables, sprinkle with the reserved Feta, parsley, and dried oregano.

Figure about a kilo for chicken breasts at about 70 Baht. For 4 servings, this is about 52 cents per serving.

Variants: Place a scoop of seasoned rice on the plate prior to adding the vegetables or serve with seasoned rice on the side.

  1. Cut the carrots into 1 inch pieces, then cut each piece into strips about equal in diameter to the beans.
  2. Steam the long (green) beans for about 3-5 minutes until tender to the bite, depending on how crisp and tender you like the beans. Remove and set aside. (You can steam the carrots for about 1-2 minutes, then add the beans and steam together until crisp, which is what I did.)
  3. Steam the carrots for about 3-8 minutes, depending on the size and how crisp and tender you like carrots. Remove and set aside.
  4. Melt the butter in a large pan over medium heat, Saute the onion and garlic until the onion is translucent, add the mushrooms and cook until almost tender, cover and reduce heat to low and simmer for 2-3 minutes, stir in the carrots and green beans, salt, seasoned salt, and white pepper. Cover and cook for about 5 minutes, stirring occasionally to heat everything through. (Mushrooms I used was a 150 gram package of Shimeji mushrooms, chopped.)
  5. Serve as a side dish.

  1. Preheat your oven to 140 C. Line a baking sheet with foil.
  2. In a bowl, mix together the salt, black pepper, paprika, cayenne pepper, oregano, and brown sugar.
  3. Trim the ends of the strip of ribs to remove any odd or cartilage pieces, lay the strips on the baking sheet, cut the strips in half if needed. This is the type of ribs I use from Tesco.
  4. Season both sides of the ribs with the seasoning, arrange meaty side up, cover with another sheet of foil. Bake for 2 hours.
  5. Increase the oven temp to 200 C, carefully remove the foil covering the ribs, spread BBQ sauce evenly over the top of the ribs, place the long beans along the sides of the pan, season the long beans with salt.
  6. Bake for another 10 minutes. Cut the ribs into single bone pieces.
  7. Serve the ribs with the long beans, complete meal.
Recipe Notes

Pork ribs are about 115 Baht/kilo. 1 1/2 kilo would be about 173 Baht. For 4 servings, this is about $1.27 per serving, over all good price for a quality meal, after all, who does not like ribs.

  1. In a large skillet over medium heat, warm the butter and the oil. Add the onions and cook slowly until tender, about 5 minutes. Add the garlic and saute until fragrant. Add the ground beef and crumble as it cooks. Stir in tomato sauce, Worcestershire, red wine, salt and pepper. Bring to a boil and then reduce heat to a low simmer.
  2. Cover with lid and simmer for at least 20 minutes or up to an hour. About ten minutes before serving, add the green beans, stir and cover with lid once more. Serve with mashed potatoes or rice. Enjoy.
