  1. Cook the pasta in a pot of boiling, salted water, until tender. Over cooked by a minute or two is preferred. For pasta salads, just tender pasta is not desired, since the pasta is not being cooked further in a sauce, you want well cooked pasta. Drain the pasta and rinse under cold water to stop the cooking process. Place the pasta in a large mixing bowl.
  2. While the pasta is cooking, mix together the vinegar and sugar.
  3. Add the vinegar mixture and Italian seasoning to the pasta and mix well to coat all the pasta and distribute the seasoning. Let the pasta cool.
  4. Once the pasta is cooled, mix in the onion and olives and mix well.
  5. Cover and place in the fridge overnight.
  6. Now the base recipe is ready. This can be served as is, or dressed up as you desire. Add any of the Customize ingredients as you desire to change this salad each time you make it.
Recipe Notes

The base recipe is low cost, depending on other added items, that will increase the per serving, but certainly not over $1 per serving 🙂

  1. Add the first 5 ingredients to a large mixing bowl. Toss together to coat everything with the oil. Season with salt and pepper as desired. Set aside to let the flavors combine.
  2. While the tomato mixture is set aside, cook the pasta in a pot of salted boiling water until tender. Drain well.
  3. Toss the pasta with the tomato mixture to combine.
  4. Serve as a light dinner with garlic bread if desired.

The cheese would be the only big expense here. About 140 Baht for 200 grams, just going with the 200 instead of 250 grams, for 6 servings, this is about 73 cents per serving.

  1. In a small bowl, add everything except the tomatoes, whisk until combined to make the dressing.
  2. Add tomatoes to a large mixing bowl, add the dressing and gently toss to coat. Cover and place in the fridge for at least 2 hours or up to 8 hours before serving.
  3. Serve as a side with your favorite main dish like chicken or fish.

  1. Heat a pot of salted water and cook the pasta until just tender, drain.
  2. Heat a large non stick pan and melt the butter, then add the garlic and cook for 1-2 minutes until fragrant, add the shrimp and cook for 4-5 minutes, turning often, until pink.
  3. Remove shrimp and using the same pan, add the flour. whisk and cook for 1 minute. Whisk in the cream and milk. Add the shrimp back to the pan, add the basil, pinch of salt, pinch of red pepper flakes, and the black pepper. and stir to mix together.
  4. Add the pasta, mix to combine, serve.

Figure about 175 Baht/750 grams of small white shrimp from Tesco, lower cost for local farm raised, for 4 servings this is about $1.30 per serving.

  1. Preheat your oven to 190 C. Bring to a boil a large pot of salted water, add the pasta and cook until just tender, drain.
  2. Add butter to the same pot and melt over medium heat. Add garlic and cook until fragrant, about a minute. Sprinkle with flour and cook until golden brown, about a minute more. Add milk and bring to a simmer. Let thicken then add 1 cup mozzarella, the Gouda, and Parmesan and stir until melted, about 2 minutes.
  3. Add the macaroni and stir until completely coated, then stir in the chopped pepperoni, 1/2 cup pizza sauce, oregano, and crushed red pepper flakes. Season with salt and pepper to taste.
  4. Transfer to a baking dish and spoon remaining pizza sauce on top. Top with remaining mozzarella and pepperoni slices. Bake until cheese is melted and golden brown and the pepperoni crispy, about 15 minutes.
  5. Garnish with basil and Parmesan and serve.
Recipe Notes

Only thing that is expensive is the cheese. Figure about 120 Baht for the Mozzarella, 90 Baht for the Gouda, and 90 Baht for the Parmesan. For 6 servings, this is about $1.47 per serving.

  1. Preheat your oven to 180 C. Slice the rolls in half lengthwise, slice the entire package at one time, not individually. Place the bottom half in a 9x13 baking dish.
  2. Spread the chicken evenly on the rolls, followed by the tomato sauce, Mozzarella, and basil. Place the top layer of the rolls on the top,
  3. In a small bowl, mix together the melted butter, garlic, parsley, and Parmesan. Brush the top of the rolls with the butter mixture. Bake for 20 minutes.
  4. Slice into individual sliders, serve, and watch your fingers!
Recipe Notes

The rolls at Tesco are 40 Baht, Mozzarella cheese I will estimate at 100 Baht for 6 slices. For 4 servings, this is about $1.03 per serving.

  1. Preheat your oven to 200 C.
  2. Cut the pizza dough into 8 pieces on a floured surface.
  3. Roll out or use your hands, one piece of dough until flat and somewhat round in shape, does not have to be perfect.
  4. Spread 1 tablespoon of tomato sauce on the flattened dough. Wrap up two meatballs in a slice of Mozzarella and place them in the center of the dough. Sprinkle with 1/2 tablespoon Parmesan cheese and some fresh basil.
  5. Fold one side of dough up and over ingredients, and seal calzone by crimping the edges together. Place on a parchment lined baking sheet. Repeat for the remaining calzones.
  6. Mix together the egg and water to make egg wash, brush each calzone with the egg wash and sprinkle with black pepper to your liking.
  7. Bake for 15-20 minutes or until golden brown. Serve.

  1. Heat the oil in a large Dutch oven or pot over medium-high heat. Once the oil is hot, salt both sides of each rib, then add to the pot and cook until golden brown, about 3 minutes per side. Remove to a plate.
  2. Reduce the heat to medium. Add the garlic, carrot, celery, onion, bell pepper and 1/2 teaspoon salt, stir to combine and then partially cover with a lid. Cook, stirring frequently, until the vegetables are soft, about 6 minutes. Add the wine, bay leaves, thyme, crushed red pepper and 1/2 teaspoon salt and simmer until most of the wine has evaporated, about 2 minutes.
  3. Nestle in the browned ribs (and any accumulated juices), then add the crushed tomatoes and 1 cup of water and 1/2 cup tomato juice from the can. Bring to a high simmer, then adjust to a low simmer and cover the pot partially with the lid. Cook, stirring occasionally, until the meat is tender and falling apart and the sauce has reduced, about 2 hours.
  4. Bring a large pot of water to a boil and add the pasta. Cook according to the package instructions, drain, reserving about 1 cup of the cooking water.
  5. Stir the parsley into the sauce and adjust the seasoning to taste with salt. Thin out with a little of the reserved pasta water and stir some of the basil.
  6. Divide the cooked pasta among bowls and top each with some ragout. Drizzle each bowl with a little olive oil, top with a generous amount of Parmesan and garnish with a few basil leaves.
Recipe Notes

Overall, the only costly item here is the pork shoulder but that is 50 Baht/500 grams, so for 4 servings, this is about 37 cents per serving. Excellent value.

  1. In a bowl, combine the olive oil, basil, parsley, salt and pepper, tomatoes and their juice as well, and the beans. Set this aside and let the flavors blend for about an hour. The longer you let this sit, the better the sauce will be.
  2. Heat a quick swish of olive oil in a non stick pan over medium heat. Pat the fish dry and season with salt and pepper on both sides, then pan-fry on each side for about 3-4 minutes until golden brown. Remove from the pan and set aside.
  3. Add the tomato white bean mixture to the skillet and add the butter. Bring to a low simmer. The sauce should start to thicken. Add the chicken or vegetable stock as needed to thin it out. Season with salt and pepper to taste. When the sauce is velvety and loose enough to evenly coat the back of a spoon, add the fish back in. Spoon the sauce over top of the fish and serve sprinkled with some Parmesan cheese.
Recipe Notes

There is several options to get Barramundi, one is Tesco which is freshwater farm raised, another option is from an open market near the ocean and should be able to get ocean farmed Barramundi. Ocean farmed are normally larger fish. In Tesco it is sold at about 68 Baht/fish, ocean farmed is normally sold by the kilo and it is just slightly more than the Tesco fish. One fish will be 2 fillets, cut each fillet in half and there is your 4 pieces. Using Barramundi from Tesco, this is about $1 per serving for 2 servings. Pangasius would be slightly less. Using canned beans would add anywhere from 60 to 90 Baht to the cost.
