I have never seen this variety of condensed soup in Thailand, at least where I live, so here is a shortcut, you know what goes in it exactly. This makes basically 1 can of Condensed Cream of Asparagus Soup.

  1. Place chopped and blanched asparagus and oil into a 2 quart microwave safe bowl. Cover and cook on HIGH for 4 minutes.
  2. Add remaining ingredients and whisk until smooth.
  3. Microwave for 2 minutes, stopping to whisk after 1 minute and again when finished, if not thick or to your desired consistency, microwave for another minute and whisk again, continue until thickened.
Recipe Notes

Most recipes will just call for a can of condensed soup, some recipes (or if you just want to make the soup by itself) call for plus 1 can of water. One can equals 1 1/4 cups of water. But as a healthier alternative to using water, try using whey if you recently made cottage cheese, or water used to boil potatoes. Milk can also be used in place of water to make a creamier soup.

  1. Season chicken with salt and pepper on both sides. Melt 2 tablespoons butter in a large pan over medium high heat. Stir in garlic and seasoning and cook for about a minute or so until the garlic is fragrant.
  2. Reduce heat to medium, add chicken to the pan, and cook for 5-7 minutes, then flip and cook another 5-7 minutes.
  3. Scoot the chicken over the sides and add remaining 1 tablespoon butter to the empty portion of the pan. Once the butter is melted, add the asparagus. Season asparagus with salt and pepper to taste. Cook, rotating throughout, for 4-6 minutes until tender and chicken is completely cooked through.
  4. Serve.
Recipe Notes

Six thighs would be under 1 kilo, so less than 75 Baht. For 4 servings, this is about 55 cents per serving.

Sounds delicious. Oddly enough, I have never eaten risotto or ever made it, so this sounds like a good one to start with. Finding the proper rice could be a challenge. I will adjust the times once I make this as well.

  1. Heat a large pot over high heat and add the olive oil. When oil is hot, add the cubed chicken, seasoned with salt and pepper, and brown on all sides, 4-5 minutes. Set chicken aside.
  2. Add chopped asparagus, zucchini, and mushrooms and cook until just softened, about 8 minutes. Set vegetables aside.
  3. Melt butter in the pot and add the Arborio rice. Stir until rice is toasted and lightly browned, then return veggies and chicken to pan.
  4. Lower heat to medium and add white wine. Cook until wine is almost evaporated, stirring frequently.
  5. 1/2 to 2/3 cup at a time, add chicken stock, stirring frequently and replenishing liquids once mixture is dry enough that spoon leaves a track through the rice.
  6. When chicken stock is completely absorbed, taste rice and see if it’s tender enough. Risotto should be thick, but still able to spread out a little. You want it to be just tender, but if it’s too crunchy, add 1 cup water (a bit at a time). Adding too much will make your risotto gummy.
  7. Serve hot and garnish with Parmesan cheese as a side dish or even as a main dish.

  2. Heat oil in a large pot over high heat. Cook garlic and chicken until no pink is showing. Add asparagus, tomatoes, carrots, salt, and pepper, cooking for about 2 minutes. Add cooked pasta and Parmesan, stirring until cheese is melted and evenly distributed. Serve!

  1. In a large frying pan, heat a splash of olive oil over medium-high heat. Add shrimp to the pan, then season with salt and red pepper flakes, cook until the shrimp is pink, remove the shrimp from the pan and set aside.
  2. In the same pan, heat another splash of olive oil and add asparagus, add ginger and garlic, then season with salt. Stir frequently and cook until the asparagus is tender-crisp.
  3. Return the shrimp to the pan, then add soy sauce. Stir until the ingredients are well combined and heated through, just before the dish is ready, add lemon juice, stir once more, then serve while hot. Serve with rice on the side would be excellent.
Recipe Notes

Shrimp would run about 100 Baht/500 grams, this comes out to about 75 cents per serving for 4 servings. Excellent value and nutritious.

  1. Heat a large non-stick pan over medium heat and melt 1 tablespoon of butter. Add half of the garlic and stir for about 10 seconds, then add the asparagus and season with a pinch of salt. Cook for about 5 minutes, stirring occasionally. Transfer the asparagus to a bowl.
  2. Return the pan to medium high heat and melt 2 tablespoons of butter, add the shrimp and season with a pinch of salt and cook until pink with no grey showing, stir occasionally. Turn the heat to low, add the remaining garlic and stir well, season with black pepper if desired. Add the asparagus, stir to combine and serve.
Recipe Notes

Shrimp will cost about 200 to 240 Baht per kilo. So at 240 Baht, and for 4 servings, this is about $1.75 per serving, not bad considering large shrimp. If you used small shrimp, the price would be less.
