I like chicken hearts, and this is a simple and easy meal to put together. I made this on 12 Dec 2017 as a way to use up some chicken hearts I had in the freezer, and this gives me an idea for a base recipe for leftovers as well. Link to the shortcut is listed in the Recipe Notes section.

  1. In a large non stick pan, heat the oil and add the chicken hearts and saute for a few minutes, they release a lot of fat was well (additional flavor), add the onion and garlic, and saute until the onion is translucent and hearts cooked through. Drain the hearts.
  2. While the hearts are cooking. In a small sauce pan prepare the chicken gravy according to the packet instructions, this is normally 2 packets to make 2 cups. Once the gravy is made, add the drained hearts and stir in, season with the sage, celery seed, and salt and pepper to taste.
  3. In another small sauce pan, cook the pasta in boiling water until tender, then drain.
  4. Place some noodles on a plate and ladle on the gravy, enjoy.
Recipe Notes

Figure about 50 Baht for the chicken hearts. For 2 servings, this is about 74 cents per serving.

  1. Cook the egg noodles in a pot of salted water until tender, drain, keep warm. Toss occasionally to prevent them from sticking.
  2. Add the flour to a shallow dish, season with salt and pepper as desired. Coat each piece of chicken with the flour on both sides, shake off the excess and set aside.
  3. In a large heavy bottomed non stick pan, heat 3 tablespoons of oil, when hot, add the chicken and cook until golden brown on the bottom, about 3 minutes. Just let them cook, no need to fiddle with them. Turn them over and cook the other side until golden brown, about 3 minutes. Remove the chicken to a plate and set aside.
  4. Add the remaining tablespoon of oil to the same pan and add the mushrooms and cook stirring once in a while until they just start to brown and release their liquid, about 5 minutes then add the garlic and stir until the garlic is fragrant, about 30 seconds.
  5. Now add the Cream cheese and stir until melted, then stir in the cream and milk and season with salt and pepper as desired. Add the chicken back to the pan, cover and simmer for 7 to 10 minutes. Turn the chicken over and simmer for another 7 to 10 minutes or until juices run clear. Place the warm egg noodles, heat them again if needed, on a serving tray or in a baking dish. Place the chicken on top of the noodles.
  6. Add the spinach to the same pan, cover until wilted, about 5-6 minutes, stir and mix into the sauce and season with salt and pepper as desired. Pour the sauce over the chicken and noodles, serve with a vegetable on the side.

Figure 70 Baht for 4 chicken breasts, and about 75 Baht for the Cream cheese. For 4 servings, this is about $1.07 per serving.

  1. Preheat your oven to 180 C. Grease a 9x13 baking dish with butter.
  2. In a large (I may use a medium size pot for this) non stick pan melt the 1/4 cup of butter then add the onion, celery, bell pepper, and garlic for about 3 minutes, then sprinkle in the flour and mix and cook for another minute. Remove from heat.
  3. Slowly stir in the milk, then return to heat and stir until thickened and the mixture comes to a boil, season with salt and pepper to your liking, stir, then stir in the mushrooms, Cheddar cheese, and tuna, when mixed, add in the egg noodles and mix to combine.
  4. Pour the mixture into the prepared baking dish and smooth out, sprinkle on the breadcrumbs then Parmesan cheese, drizzle with the melted butter.
  5. Bake for 25-30 minutes, remove and let rest 5 minutes, serve.
Recipe Notes

The Cheddar cheese is the most expensive part here, for 2 cups, think about 180 Baht. For 6 servings, this is about 88 cents per serving.

  1. Preheat your oven to 200 C. Grease an 8 inch or 7x11 baking dish with butter.
  2. To the casserole dish, add the egg noodles, chicken, peas and carrots, soup, sour cream, and milk. Mix together.
  3. If you like your casserole with a crunchy topping, mix together the breadcrumbs, melted butter, pepper, and salt in a medium bowl. Sprinkle the top of the casserole with the breadcrumb mixture.
  4. Bake the casserole for 15 to 20 minutes, or until the top is bubbling and the breadcrumbs (if using) are toasted. Serve.
Recipe Notes

For the chicken, use any parts you like, bake or boiled is fine. If you boil, reserve the broth for use in another recipe. Maybe 40 to 50 Baht worth of chicken in this recipe. For 4 servings, this is about 37 cents per serving.

Variant: Double the recipe and use a 9x13 baking dish.

  1. Add the oil to a large deep skillet, heat then add the onion and cook until translucent, then add the garlic and ginger. Cook for a few more minutes, then mix in the cinnamon and add the bay leaves.
  2. Add the chicken to the pan and cook 8-10 minutes or until it changes color, then add the turmeric, coriander, soy sauce, cumin, chili powder, chicken stock, and bring to a boil.
  3. Add the corn starch to half a cup of water, and stir that into the pan and reduce heat to a simmer and cook until thickened. Then add the coconut milk. and simmer for 5 minutes.
  4. While the pan is simmering, boil some water in a pot and cook the egg noodles until tender, and drain.
  5. To serve, add some egg noodles to a bowl, spoon some curry over the top and top with condiments of your choice, such as a hard boiled egg, Bird's Eye chilies, chopped onion, etc.
Recipe Notes

The chicken would cost about 50 Baht/600 grams. For 4 servings, this is about 37 cents per servings.

Variant: In place of the chicken, you can use prawns, fish, pork, or beef.

  1. In your slow cooker, stir in all the ingredients together except the beef, water, and cream cheese.
  2. Once combined add the meat and stir that in. Mixture should be thick and covering the beef, add 1/4 cup of water to thin the mixture slightly if needed. Photo shows 500 grams so far of beef roughly cubed.
  3. Cook on Low setting for 8 hours, no need to lift the lid, just let it cook and the slow cooker will tenderize that beef.
  4. About an hour before the beef is ready, cut up the cream cheese into small cubes and let it soften.
  5. When the beef is cooked, and tender, if not tender at 8 hours, continue cooking for another hour or so. About 10 minutes before serving, set the slow cooker on high setting and stir in the cream cheese and stir to mix that into the beef mixture until combined, cover for a few minutes.
  6. Boil the noodles in a pot of water until tender, drain. Now at this point you can mix into the meat mixture or serve with noodles topped with the meat mixture.
Recipe Notes

Figure about 200 Baht/kilo for the beef. Think local raised, anything you buy in a store will cost much more. For 6 servings this is about 98 cents per serving.

The beef will cost about 200-250 Baht/kilo. Figuring 200 Baht, for 4 servings, this is about $1.47 per serving, less for 6 servings. Using minced pork at about 80/kilo, this is about 60 cents per serving, less for 6 servings. Good value overall.

  3. In a large bowl, mix the soup, milk, and water, then mix in the noodles, ham, and cheese, season with black pepper to your liking. Pour this into the baking dish and top with the dry stuffing. Bake uncovered for 30 minutes or until the casserole is bubbling and browned on top. Remove from oven and let rest 10 minutes, serve. Steamed broccoli or asparagus as a side would complete this meal.
Recipe Notes

The cheese will cost about 180 Baht for a 250 gram block of New Zealand import cheese, brand is Mainland. The ham slices, 2 thick slices was about 100 Baht from Makro. If you make the soup yourself, as well as the seasoned stuffing, you get more savings. For the cheese and ham, 6 servings, this is about $1.33 per serving.

Variants, keep in mind adding variants will also increase the cost as well. Add sliced fresh mushrooms, peas, pea pods, or even baby corn chopped into 1 inch pieces.

  1. Preheat your oven to 180 C, or if you choose to pan fry these, omit this step.
  2. In a large bowl, mix the meatball ingredients until completely combined. Form into golf ball size meatballs and place on a baking sheet pan or a rack on a sheet pan, just place on a plate if you are going to pan fry these.
  3. To cook these, baking is preferred, bake for 20 to 30 minutes, cut one in half to make sure they are cooked through. Pan frying may result in meatballs falling apart.
  4. In a large non stick skillet, add about a tablespoon of butter and olive oil and heat, then add the onion and cook until golden brown and softening. While doing this, add 1/2 cup beef stock to the corn starch to make a paste.
  5. When the onions are cooked, add 2 cups of beef stock to the skillet, the Worcestershire sauce, ketchup, and mustard. Bring to a gentle boil and add the cornstarch mixture. Return the meatballs to the pan, reduce the heat to low, simmer for 10 minutes or until meatballs are cooked through sauce is thick, use more beef stock as needed if the sauce is too thick.
  6. Serve meatballs and the gravy over pasta and sprinkle with fresh chopped parsley.
Recipe Notes

Only thing pricey here is the ground beef. At about 250 Baht/kilo, this comes out to about 75 cents per serving for 10 servings. Great value.
