  1. Preheat your oven to 220 C (425 F).
  2. Heat a pot of salted water to a boil, then add the pasta and cook that until just tender, drain well (let cool for a few minutes before adding to a Pyrex dish) pour into a 9x13 baking dish.
  3. While the water is heating for the pasta, heat a large non stick pan and add the sausage and break it with a spatula as you cook it, add some chopped up pepperoni slice if want and add to the pan as well, as much as you like. When cooked through, do not drain, just pour into the baking dish and mix with the pasta until "all the pasta is coated with the yummy meatiness." (Author's words, very cool!)
  4. Add the pasta sauce and mix together, now add the pizza cheese blend and mix that in. Once mixed, smooth out the top evenly, top with Mozzarella, then a layer of pepperoni slices.
  5. Bake until bubbly, about 25 to 30 minutes. Remove and let rest for a few minutes, you have a bubbly dish of cheese lava, you are just cooling it a bit before serving.
  6. Serve. Garlic bread would be a great side dish.
Recipe Notes

The sausage if you make yourself, about 45 Baht. The cheeses will cost about 175 Baht for the pizza cheese blend, and 140 Baht for the Mozzarella. For 6 servings, this is about $1.77 per serving.

Variants: 1. Easy, anything you like on a pizza. The author, Amy, says diced green bell pepper and sliced mushrooms is a very good addition. 2. To make this leaner, use chicken sausage.

  1. Slice the Andouille sausage in half lengthwise and slice half moons 1/4 inch thick. For regular pork or beef sausage, just slice 1/4 inch thick. Set aside.
  2. In a large non stick pan, heat a splash of olive oil, when hot, add the cubed chicken and season with the Chicken Seasoning spices to taste, just a bit of each spice will do. Lightly brown the chicken, no need to cook through, over cooked chicken = tough chicken. When lightly browned, remove from the pan to a large bowl and set aside. If there is water in the pan, pour that off.
  3. Same pan, add the sausage and brown that up, remove from the pan and add to the bowl with the chicken and set aside.
  4. Same pan, add the bell peppers, saute for about 5 minutes then add the garlic and shallots. Saute for about 15 minutes or until the bell peppers are just softened yet still crunchy. If using the the optional mushrooms, add those now and saute to just soften them. Remove from heat and set aside. Now follow either Method 1 or Method 2 for the final preparation.
Method 1
  1. In a large pot, add the stock, cream, chicken and sausage, bell peppers from the pan, and the pasta. Bring to a boil then reduce to a simmer and cook for 25 to 30 minutes uncovered, to reduce the liquid amount, stirring often.
  2. Stir in the spring onion and Parmesan, simmer for 5 more minutes. Serve and enjoy.
Method 2
  1. In a pot heat the stock to boiling and cook the pasta until tender. Drain.
  2. While the pasta is cooking, add the sausage and chicken to the pan with the bell peppers, use low heat and just heat everything through.
  3. Add the drained pasta to the pan and mix together well, then add the cream and just simmer for 10 to 15 minutes. Serve and enjoy.
Recipe Notes

The chicken will cost between 30 and 60 Baht, 500 grams/1 kilo, and the sausage, going with Cumberland, 750 grams is about 267 Baht. For 6 servings, this is about $1.60 per serving.

  1. Preheat your oven to 180 C. grease a 9x13 baking dish with butter.
  2. Cook the pasta in a pot of boiling water until just tender, drain and rinse with cold water, drain well then place the pasta in the baking dish and spread evenly.
  3. In a large non stick skillet, brown the sausage and beef along with the onion and garlic until the meat is no longer pink then drain off the fat. Add the diced peppers and cook for 2-3 minutes until the peppers are just starting to get tender, then mix in the pasta sauce and oregano. Mix this together then pour the meat sauce over the pasta in the baking dish.
  4. Top the meat sauce with a layer of cheese then top the cheese with slices of Pepperoni. Bake for 35-40 minutes or until the cheese is melted and the pasta is warmed through. Serve.
Recipe Notes

Bulk sausage I cannot price but you can make yourself with ground pork which will cost about 25 Baht/250 grams. Figure about 50 Baht for 250 grams of ground beef. The Mozzarella cheese will cost 140 Baht for a 200 gram block which will make about 2 cups of shredded. If using 3 cups of shredded, go with 1 1/2 blocks at 210 Baht. For 8 servings, this is about $1.05 per serving.

  1. Heat a splash of olive oil in a large deep skillet and brown the sausage, onion, and long beans until the sausage is cooked through and the beans are tender.
  2. Mix in the cooked pasta then stir in the pasta sauce. Add the cheese on top and let melt, OR you can use an oven safe pan and put in the broiler for a few minutes to melt the cheese, OR, just mix the cheese in and let it melt. Garnish with parsley and serve.

Unless you can find bulk Italian sausage, you may need to make the shortcut, I will base the pricing on home made sausage (so easy!). 500 grams of minced pork is about 55 Baht, the cheese however is about 142 to 210 Baht, depending if you want to use 2 cups or 3 cups (figure 100 grams (block type) per cup shredded. For 8 servings using 2 cups of cheese, this is about 75 cents per serving. Make the sauce yourself for more savings.

  1. For the sausage, go with 250-500 grams, think spicy smoked sausage (Makro), brats, beer brats, English beef or pork bangers, or even large, quality hotdogs. If you choose to use homemade bulk sausage, think meatballs, such as Italian sausage, plain pork sausage, or even chicken sausage.
  2. In a large pot, heat the oil and cook the garlic and onion until the onion is starting to soften, then add the sausage, salt and pepper.
  3. When the sausage is browned up, add the tomatoes, sugar, heavy cream, and mix. Then add the pasta and water and mix well, cover and cook on simmer for 15 minutes, stirring every 5 minutes or so.
  4. After 15 minutes or when the pasta is tender, remove from heat, stir in the spring onion, cover and let sit for 5 minutes, serve with Parmesan cheese on top if desired.
  5. Served.
Recipe Notes

Sausage will be the costly item here if you buy it, much cheaper if you make it. For store bought smoked sausage, figure about 150 Baht for 500 grams. For 4 servings this is about $1.10 per serving, good value overall, and less for 6 servings.

  1. Cook the pasta in a pot of boiling water until just cooked. Drain and cover to keep warm.
  2. Meanwhile, heat a large non-stick pan over medium heat, add a splash of olive oil. Add the onion and cook for 3 minutes or until just soft, then add the mushroom and cook for another 3 minutes. Then add the garlic and ham and cook for 1 minute. Stir in the evaporated milk and bring to the boil, then reduce the heat to low and simmer for 2 minutes, stirring regularly to avoid the sauce from sticking to the bottom of the pan.
  3. Meanwhile, mix together the corn flour and 1 tablespoon water until it forms a smooth paste. Stir into the sauce and simmer for 2 to 3 minutes or until the mixture has thickened. Add the cooked pasta, salt, pepper, parsley, and Parmesan cheese to the pan and toss until well combined. Serve with a green salad for a complete meal.
Recipe Notes

The ham, I would estimate at 2 to 3 cups of cubed, would be about 100 to 125 Baht. Everything else is low cost. This comes out to about 92 cents per serving for 4 servings. Excellent value for this meal.

Variants, use cooked cubed chicken in place of ham for additional savings.

  1. Preheat your oven to 180 C (350 F). Get out 2 baking dishes.
  2. Cook the pasta in boiling water until just done, drain and place in the baking dish or dishes.
  3. While the water is heating for the pasta, brown the minced pork (or meat of your choice) in skillet (feel free to use more meats as well), drain any fat. Add the tomato sauce and softened cream cheese that has been cut into cubes, and the thyme, season with salt and pepper to taste. Cook, stirring occasionally until the cheese is melted or nearly melted.
  4. Spoon the meat sauce over the pasta layer in the baking dish or dishes. Then add the spinach over the meat sauce.
  5. Now layer the shredded cheese over the spinach. One block of cheese per dish.
  6. Bake for 30 minutes or until the cheese starts to brown. Remove from oven and let rest for 5 minutes before serving.
Recipe Notes

Minced pork is about 62 Baht/500 grams. The Cream cheese is 60 Baht for half of a 250 gram block, and the Mozzarella cheese is about 280 Baht for two 200 gram blocks. Make the tomato sauce from paste for greater savings. This comes out to about $1.20 per serving for 10 servings. Using chicken this would be less, using beef would be more.

  1. In a skillet, saute diced onion for a few minutes until the onion turns soft and translucent. Add minced garlic and diced red pepper and stir to mix.

  3. Once mixed, add the chicken stock and cream. Bring this to a boil and add the pasta. Give the pasta a stir. Cover the skillet and simmer for 10-15 minutes, or until the pasta is tender. Remember to give the pasta a stir occasionally. If the water level is too low, add a little more chicken stock. The starch in the pasta will thicken the sauce as it cooks.
  4. Once the pasta is tender, the dish is ready. Season with salt and black pepper as desired. Serve the pasta, topped with cherry tomatoes, Italian parsley, chili flakes if desired, and Parmesan.

  1. Season the chicken with salt and pepper and in a skillet, brown the chicken in a little olive oil. There is no need for the chicken to be cooked through as it will be cooked with the sauce later.
  2. Then add the minced garlic and cook for another minute. Then add the chicken stock, cream, and pasta, mix this and bring to a boil. Once boiling, reduce heat to a simmer, cover, and cook for 15-20 minutes or until the pasta is cooked. Stir occasionally, if the liquid is reducing, add a bit more stock and cream.
  3. When the pasta is cooked, remove from heat and stir in the Parmesan cheese, season with salt and pepper as desired, garnish with parsley if desired, serve.
Recipe Notes

Chicken will run 60 to 75 Baht/kilo, you will need just 600 grams of chicken for this. Parmesan cheese on the other hand is about 280 Baht/200 grams. For 4 servings, this comes out to about $2.35 per serving. High cost for a good meal, much higher than our standard of $1 per serving. Maybe not a recipe to put on the weekly planner but sounds great on the monthly planner.

For the Chicken
  1. Combine all the ingredients except the chicken and the barbecue sauce to make a dry rub. Coat the chicken with the dry rub. Place the chicken in your slow cooker, pour the barbecue sauce over the chicken and cover with a piece of baking paper. Put the lid on and cook on Low setting for 3-4 hours, or until chicken is tender. Cool slightly before shredding the chicken with a pair of forks. Set aside.
For the Pasta
  1. Heat olive oil in a skillet. Add onion and garlic and saute for 1 minute. Add the red pepper and zucchini. Stir to mix. Add the chicken, followed by the chicken stock, condensed soup, and cream. Stir to combine. Season with salt and pepper to your liking. Bring to a boil. Once the liquid is boiling, add the pasta, give everything a stir and lower the heat to a simmer.
  2. Place a cover on the skillet and simmer the pasta for 10-15 minutes, stirring occasionally. If the liquid dries out too much, add a little water. Once the pasta is cooked, remove from heat and serve, garnish parsley and chili flakes if desired.
Recipe Notes

Chicken breasts run anywhere from 60 to 75 Baht/kilo. 4 breasts should be less than that. Make the shortcuts listed and this is about $1 per serving for 4 servings. Very reasonable and inexpensive meal.
