Instructions
  1. If using fresh egg noodles, soak them in hot water. If using dry egg noodles, cook those in a pot of boiling water until tender. Set aside. I used dry Japanese noodles and boiled them.
  2. Rinse the hearts and livers, trim the top of the hearts as desired. Place only the hearts in a pot and cover with about 1 inch of water. Bring to a boil then reduce heat to a gentle boil for 10 minutes, skim any foam off that forms on the top of the water. Here the hearts are in first, untrimmed as that is flavor in the fat, I trimmed them after they were removed from the broth.
  3. Three minutes after the hearts are simmering, add the liver, they take less time to cook. Here the hearts and livers are removed to drain, perfect broth on the right.
  4. At the 10 minute mark, remove the hearts and livers and drain, set the pot of broth to the side. Cut each heart and liver in half.
  5. While the hearts and livers are cooking, add the onion, garlic, and candle nuts (if using) to a mortar and pound with a pestle to form a paste.
  6. In another pot, add the onion mixture from the mortar, saute until a light yellow color, then add the hearts and livers, broth you made, and the coconut milk. Season with a teaspoon of pepper and salt to taste. Simmer until meat is heated through and is piping hot, about 5-7 minutes. I added some chopped spring onion and cilantro as well.
  7. To serve, place some drained egg noodles in bowl, ladle on the meat and broth, garnish with chopped spring onion and or cilantro. Steamed bok choy would also be a good addition to add as well when serving. Enjoy.
Recipe Notes

Chicken liver will cost about 55 Baht/500 grams and hearts will cost about 35 Baht/500 grams. For 4 servings, this is about 66 cents per serving.

Variants: 1. This can be prepared with just hearts, just livers, or a mix of both. 2. A blender can be used in place of a mortar and pestle. 3. Add some chopped spring onion, and or cilantro to the pot after adding the coconut milk. 4. Just saute the onion and garlic, that worked well for me.

Instructions
  1. Rub or mist your slow cooker with olive oil to make clean up easier. Not required but is handy.
  2. Sprinkle the loin well with salt and pepper, be generous. Place the loin in the slow cooker, add 1/2 cup of water and cook on Low setting for 6 to 8 hours, or High setting for 3 to 4 hours. This is two pieces of loin, 1 kilo, I also use these and cut in half for boneless pork chops 🙂
  3. Check tenderness at 6 and 3 hours respectively, if the pork shreds easily with a fork, it is done. When done, shred with two forks right in the slow cooker, nothing to fine, just good bite sized pieces.
  4. 20 minutes before you want to serve, place a pot on the stove and add the broth and heat to boiling then add the noodles and cook until just tender. The stock should be mostly absorbed. If there is still liquid, go ahead and drain some of that off.
  5. Use a slotted spoon and remove the pork from the slow cooker and add to the noodles.
  6. Stir to combine well. If the pork is not hot enough, heat the pot on very low heat for a few minutes, add a tablespoon or so of liquid from the slow cooker to prevent sticking, this is not a soupy dish. Taste and season as needed with salt and pepper.
  7. Serve with a salad for a complete meal.
Recipe Notes

Going with 1 kilo of pork loin, cost would be 115 Baht, for 6 servings, this is about 56 cents per serving.

Variants: 1. Add cooked cabbage or sauerkraut, add sliced mushrooms. 2. Stir in a cup of gravy.

  3. At the 4 hour mark, check the tenderness of the chicken, if tender, go ahead cook the egg noodles in a pot of salted boiling water to just before tender, drain well then add to the slow cooker and mix them in, add a bit of water if needed, make sure the noodles are submerged in the sauce. Cook for another 20 to 30 minutes, season with salt and pepper to taste, serve. IF the chicken is not tender, wait an hour, check the tenderness, if ok, proceed with the cooking the noodles as stated above and go from there.
Recipe Notes

The chicken will cost about 70 Baht/kilo. You can use white or dark or a combination of the two. For 8 servings, this is about 26 cents per serving.

Shortcuts: Condensed Cream of Chicken Soup, Chicken Gravy Mix.

Variant: 1. Use turkey in place of chicken.

  1. Combine 3 tablespoons flour, thyme, and paprika in a large zip-top plastic bag. Sprinkle chicken with salt to taste. Add chicken to bag; seal. Turn and shake bag to coat the chicken well.
  2. Heat a large nonstick skillet over medium-high heat. Add oil to pan, swirl to coat. When the oil is hot, remove chicken from flour mixture and discard flour. Add chicken to pan and cook 4 minutes or until browned. Turn chicken and cook 2 minutes. Remove chicken from pan to a plate, you are just browning, not cooking all the way through.
  3. Add onion and mushrooms to the same pan and cook 5 minutes or until mushrooms are browned, stirring occasionally. Stir in remaining 1/2 tablespoon flour, beer, stock, Worcestershire sauce, and season with salt and pepper to taste. Bring to a boil, cook 2 minutes.
  4. Return chicken to pan and reduce heat to a simmer and partially cover, cook for 15 minutes or until chicken is done.
  5. While the chicken is simmering, bring a pot of water to a boil and cook the egg noodles until tender, drain and set aside.
  6. To serve, plate noodles on a plate, top with a chicken thigh, spoon on some sauce and mushrooms from the pan, sprinkle with parsley.
Recipe Notes

Maybe 60 Baht for 4 thighs, for 4 servings, this is about 44 cents per serving.
