This is a make the day before you serve salad, or at a minimum, prepare in the morning for serving with the evening meal, the flavors need time to blend. I made this on 26 Dec 2017, tasted 6 hours later for dinner, outstanding, very well liked by my Thai wife as well.

  1. Heat a pot of salted water to boiling, add the pasta and cook until tender, drain well.
  2. While the pasta is cooking, mix together the Dressing ingredients in a good sized mixing bowl.
  3. After the pasta is well drained and cooled a bit, add it to the dressing along with the rest of the Salad ingredients except the cheese. Toss well to coat everything.
  4. Now add the cheese and fold that, then cover and refrigerate for at least 6 hours or overnight.
  5. Serve as a side, or in my opinion, as a main dish as that is what I will probably do.
Recipe Notes

I cannot price pepperoni at this time, I used a 150 gram pack of smoked ham for 90 Baht. For the Feta, that is 150 Baht for 275 grams, use half the package (75 Baht), cut the block in half and crumble that for right about a cup. Based on the Feta and smoked ham, for 4 servings, this is about $1.22 per serving.

Variants: 1. In place of pepperoni, use thin sliced smoked ham. 2. Use what you have, like a whole bell pepper instead of cup, or a package of pepperoni or smoked ham, like a cup or so, etc.

  1. Rinse the rice and set aside.
  2. Heat the oil in a large non stick pan, when hot, add the onion, carrot, and celery and saute for about 8 minutes or so, until onion is translucent.
  3. Now add the rice, garlic, Italian seasoning, oregano, basil, and salt to the pan, saute for 3 minutes or until the garlic is fragrant.
  4. Pour the contents of the pan into your slow cooker, then add the chicken and broth, stir to mix everything together.
  5. Cover and set to Low setting and let cook for 6 to 8 hours, stirring every 2 hours.
  6. The soup is done when the chicken is cooked through, rice is fluffy and tender, and thickened a bit.
  7. Serve.

Chicken will cost about 30 Baht/500 grams. For 4 servings, this is about 23 cents per serving.

  1. Heat a large non stick pan (I use a pot) with a splash of olive oil, and add the onion and garlic, cook until the onion is turning translucent.
  2. then add the beef, breaking it up with a spatula as it cooks. Drain any fat. To the beef, now add the 1 1/2 cups stock, bouillon cube, salt, pepper, basil, and parsley. Simmer for 10 minutes, stirring occasionally.
  3. Add the 1/4 cup cold stock to a measuring cup and stir in the cornstarch. Cold makes it easier to mix without lumps. Pour this into hamburger mixture and simmer for about two minutes, stirring often, until thickened.
  4. Serve over mashed potatoes with your choice of sides and enjoy.

  1. Mix in a small bowl, the garlic powder, basil, and salt, rub on the fish fillets.
  2. Melt the butter in a large non stick skillet, when hot, add the salmon and cook until browned and flakes with a fork, about 5 minutes per side.
  3. Serve with a lemon or lime wedge on top. A seasoned rice and steamed vegetable would be nice with this dish.

  2. In a bowl, mix together the chicken and the Cajun seasoning.
  3. Heat a large non stick skillet with a splash of olive oil. Add the chicken and saute for 5-7 minutes, turning as needed to brown them up nicely.
  4. Sprinkle the spring onion over the chicken, pour over the cream, add the sun dried tomatoes, basil, garlic powder, and salt and pepper as desired.
  5. Heat to a near boil and add the pasta and mix in well.
  6. Serve, garnish with Parmesan cheese.

Figure about 35 Baht for 500 grams of chicken, for 4 servings, this is about 30 cents per serving, great value.

  1. Preheat your oven to 190 C. Grease a large casserole dish with butter.
  2. Slice the potatoes in half lengthwise, then slice each half into 1/4 inch slices.
  3. Cook the spinach in a saucepan according to package instructions. Drain and squeeze out excess water. If using leaf spinach, lightly chop the spinach after draining and squeezing it dry.
  4. In a large bowl, combine potato slices and olive oil and toss to coat. Add garlic, oregano, basil, and salt and toss to coat.
  5. In prepared casserole dish, coat bottom with 1/3 of the pasta sauce, 1/3 of the potatoes, 1/3 of the spinach, 1/3 of the Parmesan, and 1/3 of the Mozzarella. Repeat layers 2 more times.
  6. Bake uncovered 45 minutes or until potatoes are tender.
  7. Serve, perfect sides would be a green salad and garlic toast.

I cannot price this until I get some frozen spinach, but with the cheese, this is probably a fair cost meal. I will update this after I make it.

For the Garlic Parmesan Cream Sauce

  1. Preheat your oven to 200 C. Lightly grease a 9x13 baking dish with butter.
  2. Season chicken with Italian seasoning, salt and pepper, to taste. Melt 2 tablespoons butter in a large skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side, set aside.
  3. Melt remaining 1 tablespoon butter in the skillet. Stir in spinach and cook, stirring occasionally, until it begins to wilt, about 2 minutes; set aside. If using frozen, just thaw and squeeze out the water.
  4. To make the garlic Parmesan cream sauce, melt butter in the skillet over medium heat. Add garlic, and cook, stirring frequently, until fragrant, about 1-2 minutes. Whisk in flour until lightly browned, about 1 minute.
  5. Gradually whisk in chicken broth, thyme and basil. Cook, whisking constantly, until incorporated, about 1-2 minutes. Stir in cream and Parmesan until slightly thickened, about 1-2 minutes. If the mixture is too thick, add more milk as needed; season with salt and pepper, to taste.
  6. Place chicken in a single layer into the prepared baking dish. Ass potatoes to the sides and top, then add spinach, and the cream sauce.
  7. Bake until completely cooked through, juices run clear, about 25-30 minutes. Garnish with fresh chopped parsley, serve.
Recipe Notes

Six chicken thighs might be near a kilo, about 70 Baht. For the cheese, go with about 150 Baht. For 6 servings, this is about $1.08 per serving.
