Instructions
  1. To pickle the shrimp, place the prepared shrimp in a bowl and add the vinegar, place in the fridge for 30 minutes. OR use your own favorite pickled shrimp recipe.
  2. Cut the eggs in half lengthwise, remove the yolks to a bowl and place the egg white halves on a serving tray.
  3. Mash the yolks with a fork, then add the mayo, pickle juice, the teaspoon of Old Bay seasoning, and salt. Mix until smooth and creamy.
  4. Drain the shrimp well, and set them aside. Pipe or spoon the filling evenly into each egg half. Sprinkle a little Old Bay seasoning on each egg, then place a shrimp and a tiny piece of dill on each egg.
  5. Place in the fridge to chill for about 30 minutes, serve.

  1. Peel the eggs and cut in half lengthwise, remove the yolks and place those in a mixing bowl, place the egg halves on a serving tray.
  2. To the yolks, add the mayo, chopped pickles and pickle juice, dill, and mustard. Mash with a fork until mixed well and creamy. Taste and season with salt and pepper to your liking.
  3. Fill the halved eggs with the yolk mixture. Garnish with a slice or two of thinly sliced pickle, then a light sprinkle of paprika, and just a list sprinkle of chopped dill. Refrigerate for at least an hour or two before serving.

  1. Cook the pasta in a pot of boiling water until tender, drain and rinse under cold water to stop the cooking process and to cool it off. Toss the pasta with 1/2 cup pickle juice and set aside for 5 minutes then drain and discard the juice and place the pasta in a large bowl along with the rest of the Salad ingredients and toss to mix together.
  2. In a small bowl, mix the dressing ingredients together. If you do not have sour cream, start with the amount of mayo stated and add more mayo as needed to coat everything yet not be dripping with mayo either. Pour this onto the pasta in the large bowl and and toss to coat everything. Refrigerate for at least an hour before serving.

  1. Cut each chicken breast in half and pound them to 1/2 inch thickness. Sprinkle each piece on both sides with paprika, salt, and pepper to your liking. Place them in a large zip lock bag or plastic bag, like a Tesco shopping bag, and pour the pickle juice over them. Press out the extra air by twisting the bag, then place that in a bowl and place the fridge for 6 hours our anytime up to overnight.
  2. Preheat your oven to 230 C and place a wire rack on a baking sheet and set aside. While the oven is heating, stir together the flour, spices, sugar, and baking soda in a bowl and set aside. In another bowl whisk together the egg and milk. Take the chicken out of the fridge, dip each piece in the egg mixture the coat well with the flour mixture making sure the entire piece is coated with flour.
  3. Place the chicken on the wire rack and generously spray each piece with olive oil, coating the flour completely. Turn the pieces over and spray the other side with olive oil. Bake for 12 minutes, then turn the chicken over and bake another 15 minutes or until the chicken is golden brown, crispy, and cooked through. Remove from the oven and top with cheese of your choice and let these rest for 5 minutes.
  4. Butter each bun and place on a sheet and bake for 3-4 minutes until toasted. Place 3-4 pickle slices on each bottom bun, top with a piece of chicken and the other toasted bun. Serve.

For 2 chicken breasts, this is low cost even if using cheese.

I really like the sound of this, I cannot find any good hotdogs here, but I have located smoked sausage, which are excellent. My next run to Makro I will be getting extra smoked sausage to try this out. The smoked sausage scraps would be ideal as well. This can be an appetizer or a main dish.   1. My experience with smoked sausage (spicy smoked sausage as it is labeled but not spicy) at Makro is 4 to 5 links which is 500 grams. I would simple cut each link in half, so you would have 8 pieces for 4 links or 10 pieces for 5 links. Once you have the sausage cut into pieces, cook on the stove top in a hot pan to warm them through, remove from the pan and insert the skewers or chopsticks in each one.
  2. Spread 1/4 cup of the flour in a dish and roll each sausage in the flour to lightly coat, then set aside.
  3. In a mixing bowl, mix the remaining flour (1/2 cup), corn meal, baking powder, baking soda, sugar, ground red pepper, eggs, buttermilk, and dill pickle juice until the batter is smooth.
  4. Heat the oil in a deep heavy skillet or a deep fryer to 190 C. Using a pan, you want the oil 1-3 inches deep. Deeper the oil you can cook each sausage at one time, shallow oil you just turn to keep cooking until the sausage is golden brown.
  5. Dip each skewered sausage into the batter and carefully insert into the hot oil and cook 1-2 minutes until golden brown, if the oil is shallow, just turn the sausage part way through to cook the whole thing to golden brown. Cool on a paper towel to drain excess oil, and serve with your favorite dip, like mustard, spicy mustard, or ketchup.

The sausage is about 100 Baht/500 grams. For 4 servings this is about 74 cents per serving. When I go to Makro again I will get more accurate up to date pricing as well.

Looking through my freezer and fridge, I had minced pork, Swiss cheese, bread, pickles, and eggs, so I decided to make a meatloaf. This is a twist on the Bacon Cheeseburger Meatloaf in that no bacon was used, Swiss instead of Cheddar was used, this turned out excellent.   1. Preheat your oven to 180 C. Get out a couple of loaf pans.
  2. In a large bowl combine all the ingredients. I just use a large spoon, no need for hand mixing. I have seen recipes that call for pickle juice or pickle relish, I decided to use sliced pickles.
  3. Mixed, takes just a few minutes.
  4. Next, slice your cheese, use real cheese. This is Mainland brand cheese from New Zealand.
  5. I use two loaf pans when making meatloaf. Take the meat mixture and pat down and using your spoon, mark it into 4 sections, use 1/4 of the mixture in each loaf pan, then top with the cheese slices.
  6. Use the remaining meat mixture to to cover each loaf pan. Top with more BBQ sauce. Bake for for 40 minutes, and use a meat thermometer to check internal temp then continue to bake about 10 minutes more to ensure the cheese is melted. Remove from oven and let rest for about 10 minutes before serving.
  7. Serve with mashed potatoes or boiled, or pasta, add a vegetable and you have a complete meal.
Recipe Notes

Minced pork is about 135 Baht/kilo. The half block of cheese will cost about 90 Baht. For 8 servings this would be about 85 cents each, even less for 10 servings.

A variant would be to layer in some sliced mushrooms over the cheese before adding the remaining meat mixture.
