  1. Heat the oil in a large pot, when hot, add the garlic and ginger and saute until fragrant, about 1 minute, then add the tomatoes plus juice, sugar, salt, black pepper, and red pepper. Cook and stir for about 3 minutes.
  2. Add the stock and potatoes, bring to a boil then reduce to a simmer. Cook for 10 minutes or until the potatoes are just fork tender.
  3. Stir in the fish, cover, and cook for 5 minutes or until the fish flakes with a fork. Taste and adjust salt and pepper to your liking.
  4. Sprinkle with parsley, serve.
Recipe Notes

Using Pangasius fillets, which are boneless and skinless, 1 kilo is about 128 Baht. For 4 servings, this is about 95 cents per serving.

  1. Heat the olive oil in a non stick pan. While that is heating, place the flour in a large bowl add season with salt and pepper to taste, mix in the beef to coat. When the oil is hot, add the beef to the pan in batches to brown all sides, not cooking it through just browning it a bit. Place browned beef in your slow cooker.
  2. Once all the beef is browned and in the slow cooker, pour in the stock, diced tomatoes (these can be canned or fresh), Worcestershire sauce, vinegar, and stir, then add the potatoes, carrots, onion, celery, oregano, garlic, and bay leaf.
  3. Stir to mix then cover and set the slow cooker to Low setting and cook for 8 hours.
  4. Whisk together the cornstarch and water, pour into the slow cooker and stir to mix into the stew, cover the pot and set to High setting for another 30 minutes to an hour to thicken the stew.
  5. Serve with biscuits or bread.

Figure about 300 Baht for the beef. For 6 servings this is about #1.47 per serving.

Shortcut: Tenderize Beef with Tomatoes.

Variant: 1. Instead of adding potatoes to the stew at the beginning, serve the stew over mashed potatoes. To do this, increase the stock used by a cup to allow a soupier stew that will go well with mashed potatoes.

  2. Set your rice cooker to Cook setting, when it switches to Warm, fluff with a fork and test for salt, add as needed.
  3. Serve as a side dish or in tortillas.

  1. For the chicken go with 750 grams to 1 kilo, quarters, breasts, what ever you like, boil or bake to cook, let cool enough to handle and debone if needed, remove skin if needed, and chop to get the cups needed.
  2. Preheat your oven to 180 C. Lightly grease a 9x13 baking dish with butter.
  3. Cook onion and bell pepper in hot oil in a large skillet over medium high heat, about 5 minutes or until tender. Stir in chicken and next 7 ingredients, remove from heat.
  4. Tear tortillas into 1 inch pieces,layer 1/3 of tortilla pieces in bottom of the baking dish, top with 1/3 of the chicken mixture, then top with 1/3 of the cheese. Repeat these same layers 2 more times.
  5. Bake for 30 to 35 minutes or until just beginning to brown on the top.
  6. Serve with a green salad for a complete meal.
Recipe Notes

Going with 1 kilo of quarters, 75 Baht/kilo and the cheese would be about 180 Baht for a 250 gram block, shredded. I cannot price the corn tortillas yet so I will update this when I locate those. For 8 servings, this is about 94 cents per serving, however, the tortillas, unless you make them yourself, will put this at fair value at least.

Variant: Substitute the condensed cream of chicken soup for 1 cup of sour cream.

  1. Melt the butter in a large pot or Dutch oven, and the spring onion, garlic, corn, mixed vegetables, cherry tomatoes, and 2 tablespoons Old Bay.
  2. Cook on medium high heat until the tomatoes are soft and can be crushed with a wooden spoon. Then stir in the diced tomatoes and bring to a slow boil.
  3. Add the stock or water, parsley, crab claw meat, and remaining Old Bay. Simmer uncovered for 30 minutes.

I am a fan of Mexican food, and when I lived in San Diego for 6 years, I never had a Chimichanga, it sounds like a cross between a Enchilada and a Burrito.   1. Preheat your oven to 200 C.
  2. Mix the chicken, salsa (use a shortcut to make this), cumin, oregano, cheese, and onions. Place about 1/3 cup of the mixture in the center of each tortilla.
  3. Fold opposite sides over filling. Roll up from bottom and place seam-side down on a baking sheet or in a baking dish. Brush with melted butter. Bake for 25 minutes or until golden brown and crispy.
  4. Serve with toppings of your choice. A side of beans and rice would be perfect here.

Chicken is the minimal part here, tortillas will be pricey, to the tune of about 280 Baht for a pack of 10. Two of these items per serving, not including cheese is about $2.75 per serving, if you make the tortillas, bonus, if you make the salsa, bonus, but over all, not an inexpensive meal, this would be a once a month or when relatives and family visits meal. Either way, it does sound really good.

  1. Place ground beef, tomatoes, potatoes, carrot, bell pepper, onion, celery and garlic in your slow cooker and pour chicken stock over the top.
  2. Season with chili powder, salt and pepper, then stir everything together. Cover slow cooker, turn on HIGH and cook for 3-4 hours, or until vegetables are softened.
  3. Stir flour into heavy cream until no chunks remain, then pour mixture, along with cheddar cheese, into slow cooker.
  4. Stir to combine, then cover and cook for another 20-30 minutes, then ladle into soup bowls, top with cheese and crumbled bacon, if using, and serve hot!
Recipe Notes

500 grams of beef would be about 100 Baht. Cheese will run about 180 Baht per 250 grams and you will need almost 2 for this. Total cost is about $1.70 per person for 8 servings, not bad really. Use minced pork or chicken and lower the cost a lot.

  1. Heat olive oil in a large saucepan, add sausages and cook, turning regularly, for 5 minutes or until browned, you are browning, not cooking through. Remove from the pan and slice thickly. Reduce heat to medium on the pan.
  2. Add onions and peppers to the pan and cook, stirring occasionally for 3 - 4 minutes or until soft.
  3. Add rice, water, tomatoes, stock, and sausages. Stir to combine. Bring to the boil, then reduce heat to medium and allow to simmer, covered for 15 - 20 minutes.
  4. Remove from heat and set aside, covered for 15 minutes (this allows rice to complete cooking). Season with salt and pepper. Spoon hotpot into serving bowls, and a salad on the side.
Recipe Notes

Sausage produced in Thailand can be very inexpensive, pork sausage that is. At Makro we can get English Beef Sausage for about 200 Baht/kilo, we can also pick up smoked and spicy sausage for 200 Baht per 1 kilo, or 100 baht per this recipe. So this recipe meets the $1 or less per person per meal, even with a salad.
