  1. Rub the chicken pieces well with the pepper and nutmeg.
  2. Heat a large non stick pan on medium heat and when hot, add the chicken and cook until golden brown on the first side, then flip all the chicken over.
  3. Add the onion and enough warm water so about 1/3 of the chicken pieces are in the water.
  4. Add the vinegar and sweet soy sauce. Cover partially with a lid and turn heat to low and let simmer for 25-35 minutes.
  5. Turn off the heat and fully cover with the lid for 15 minutes.
  6. Serve with rice, spoon some of the sauce over the rice, and sliced cucumbers.

  1. In a pot of boiling water, cook the macaroni until just near tender, do not over cook, basically under cook it by a minute or so. Drain and rinse under cold water, the cold water will stop the cooking process.
  2. Add all the ingredients to your slow cooker and give it a mix. Cook on Low setting for 3 hours or High setting for 2 hours, stir once or twice during the cooking but quickly so not all the heat is let out of the cooker. Serve.

The cheese is the costly part here, 180 Baht/250 gram block. For 6 servings, this is about 88 cents per serving.

This is from a good friend, and is very good, just a doctored up Teriyaki sauce from a bottle. I marinated a bunch of chicken legs in this for about 30 hours, excellent and very well received by the Thai family.

This is from a good friend, and is very good, just a doctored up Teriyaki sauce from a bottle. I marinated a bunch of chicken legs in this for about 30 hours, excellent and very well received by the Thai family.

  1. Mix everything together. Place your meat in a large zip lock bag pour in the sauce and squeeze out all the air and seal the bag, squish everything around to coat all the meat and place in the fridge. How long you marinate is up to you, 1-2 hours minimum, but for great flavor, go up to 24+ hours, then grill.

  1. Combine all the ingredients except the chicken and the barbecue sauce to make a dry rub. Coat the chicken with the dry rub. Place the chicken in the bowl of a slow cooker, pour the barbecue sauce over the chicken and cover with a piece of baking paper. Put the lid on and cook on Low setting for 3 to 4 hours, or until chicken is tender.
  2. Cool slightly and remove the chicken from the slow cooker then shred the chicken with a pair of forks. If using thighs and legs, remove bones and any gristle on the ends of the legs, then shred. Ad the chicken back to the slow cooker and mix with the juices in the pot.
  3. Serve as is with buns, lettuce, and cheese available or use in other recipes.
Recipe Notes

Chicken breasts run anywhere from 60 to 75 Baht/kilo. 4 breasts should be less than that. This is about $1 per serving for 4 servings. Very reasonable and inexpensive meal.

The baking paper is used to keep the moisture in and keeps the chicken moist.
