  1. Preheat your oven to 200 C.
  2. Cut the pizza dough into 8 pieces on a floured surface.
  3. Roll out or use your hands, one piece of dough until flat and somewhat round in shape, does not have to be perfect.
  4. Layer two tablespoons spinach, 1 tablespoon Cottage cheese, and a 1/2 slice mozzarella cheese.
  5. Fold one side of dough up and over ingredients, and seal calzone by crimping the edges together. Place on a parchment lined baking sheet. Repeat for the remaining calzones.
  6. In a small bowl, mix together melted butter, Parmesan, garlic, and parsley, brush each calzone with the mixture.
  7. Bake for 15-20 minutes or until golden brown. Serve with tomato sauce for dipping.

  6. Mix together the egg and water to make egg wash, brush each calzone with the egg wash and sprinkle with black sesame seeds.
  7. Bake for 15-20 minutes or until golden brown. Serve with tomato sauce for dipping.

  1. Preheat your oven to 190 C. Lightly butter a baking dish.
  2. In a mixing bowl, beat the eggs and add in the cottage cheese and sour cream. Stir to combine and add the potatoes and remaining ingredients. Mix together well and pour into the baking dish.
  3. Bake for 20 minutes on the center rack, then move the dish to the upper rack and cook for another 6-7 minutes or until it begins to get golden brown. Let sit for a couple minutes before slicing, serve as a side.

  1. Brown ground beef in a skillet, drain, and set aside.
  2. Pour 1 cup of sauce in the slow cooker and spread around to coat the bottom. Mix remaining sauce with the ground beef.
  3. Place 2 uncooked lasagna noodles on sauce in slow cooker. Spread 1/3 of the meat mixture on top of the noodles. Spread 3/4 cup of cottage cheese over the meat. Sprinkle 1/2 cup Mozzarella over the cottage cheese.
  4. Add another layer of uncooked noodles, 1/3 meat mixture, the remaining cottage cheese and 1/2 Cup mozzarella cheese.
  5. Place another layer of uncooked noodles, remaining meat mixture, then remaining Mozzarella cheese. Sprinkle Parmesan cheese over top. Cook on low for 4 hours. Serve.
Recipe Notes

Figure about 100 Baht for the ground beef, and 140 Baht for the Mozzarella cheese. For 4 servings this is about $1.76. Not a bad price for lasagna.

  1. Preheat your oven to 180 C and get out a shallow baking dish, like an 8x8 square pan. You can use a loaf pan but will need to increase the time due to the increased thickness.
  2. Combine all ingredients except the cheese in a bowl until well mixed. Press this into the baking dish. Bake for 20 minutes, remove from oven and sprinkle cheese over the top and bake for an additional 15-20 minutes. Let rest for 5 minutes then cut into squares and serve with sides of your choice.
Recipe Notes

Ground beef will run about 100 Baht for 500 grams, minced pork will run about 70 Baht for 500 grams. To minimize the beef cost, buy a large piece of beef and mince it yourself. This comes out to about (figuring 100 Baht for the beef) 50 cents per serving for 6 servings.

  1. Preheat your oven to 180 C. Grease a 13x9 baking dish with butter. If you use the shortcut to make the hash browns, follow the steps right up to before cooking.
  2. Heat a pan and fry the bacon until crisp, drain, and set aside.
  3. In a large bowl, mix all other ingredients, then add bacon and mix that in as well. Pour into the baking dish and spread out to flatten and evenly distribute the mixture.
  4. Bake uncovered for 30 to 40 minutes or until you can insert a knife near the center that comes out clean, remove from oven and let rest for 10 minutes before cutting. Serve with toast on the side for a great breakfast.
Recipe Notes

The bacon will cost about 310 Baht/500 grams. The Cheddar cheese will cost 180 Baht/250 gram block which is good for 2 cups. The Swiss will cost about 90 Baht as you should only have to use 1/2 block of 250 grams. Cottage cheese I cannot price in a store as it is not carried over here where I am at. Just for the bacon and two of the cheeses, this meal, for 12 servings, comes out to about $1.42 per serving.

  1. Add a splash of olive oil to a large pot and heat, add onion and garlic, when translucent, add the meat and spices and mix well with the spatula (you are making a cheater Italian sausage. When cooked through and no longer pink, drain the fat, I use a colander for this, then return to the pot.
  2. Add the tomato paste and the chopped tomatoes, and about half of the tomato juice. On a light simmer, cook for about 20-30 minutes covered. If the sauce is too thick, add a bit of tomato juice retained from the can of tomatoes, not too much though. Adjust the sauce for salt and sugar during the cooking.
to Assemble
  1. Preheat your oven to 200 C.
  2. Now, take out a small handful of Parmesan and Mozzarella cheese and set aside, this is for the final layer. OR, as I do, I just use shred another 200 gram block of Mozzarella and add additional grated Parmesan cheese for use on the top.
  3. Mix the cottage cheese, remaining Mozzerella and Parmesan together with the beaten eggs and spices. If making the cottage cheese from the shortcut on my site, make 4 cups, meaning 4 liters of milk, vinegar stays the say in the recipe.
  4. Spoon just enough sauce into the bottom of a 13x9 baking dish. Then place the following layers:
  5. Noodles, you can overlap slightly, 1/3 of the cheese mixture. 1/3 of the meat sauce. Repeat with noodles, 1/3 the cheese, and 1/3 the meat sauce, repeat again with noodles, 1/3 cheese, and 1/3 meat sauce. Now sprinkle on the retained Mozzarella and Parmesan cheeses that you set aside. Photo shows the first layer added.
  6. Bake for 30 minutes, if getting dark, remove, if still light colored, continue for 40 minutes. Photo shows the completed dish before going into the oven.
  7. IMPORTANT, after removing from the oven, this needs to rest and cool a bit, as right out of the oven you have 200 degree cheese lava! Let it rest and it will firm up a bit.
  8. Serve with a salad or garlic bread to extend this meal. Enjoy.
Recipe Notes

Minced pork is about 112 Baht/kilo. Mozzarella cheese will run about 145 Baht/200 grams. Will need at least 2 blocks for 290 Baht. Parmesan will run about about 180 Baht/125 grams, will need 2 packs for 360 Baht. For the Cottage cheese, I cannot stress this enough, make it yourself from the shortcut listed on the site, this will work out to about 220 Baht.

This works out to about $1.70 per meal per person, over all, not bad! This is well below what you would find in any restaurant! The beauty of this dish, is that you made it yourself, it takes an effort and time spent in the kitchen, but the taste is well worth it, and you know exactly what is in it.

Variant: Top the entire lasagna with a single layer of sliced Provolone, Gouda, or Edam, yummy!

  1. Preheat your oven to 200 C, lightly grease the bottom of a baking dish.
  2. Cook the spinach on a medium heat in a splash of olive oil for 3-5 minutes until it is slightly wilted. Stir in the ricotta and cook for a further 30-60 seconds. Allow to cool.
  3. Cut slits into the chicken breasts about 1/2 inch apart but don’t cut all the way through - about 75% of the way down is what you should aim for.
  4. Stuff all of the spinach and ricotta mixture into the slits. Season the chicken with salt and pepper to taste. Sprinkle the Cheddar cheese on top. Shake a good bit of ground paprika over the chicken to add some color and flavor. Place chicken in the baking dish.
  5. Bake in the center of your oven for 20-25 minutes until the cheese has melted and the juices are clear. Serve with a side of egg noodles and vegetable, enjoy.
Recipe Notes

Without even doing the math, this is under $1 per serving.

Variants could be add diced onion and garlic to the spinach when cooking; adding chopped mushrooms; wrapping with bacon.

  1. Mix the eggs, cottage cheese, half the Mozzarella cheese, all the Parmesan cheese, basil, oregano, and parsley, refrigerate while you make the shells.

  1. Mix ingredients until blended, it will be watery looking, no problem!
  2. Lightly oil a frying pan and then heat the pan for about a minute over medium high heat. Spoon in the batter or use a dry measuring cup to pour the batter into the middle of the pan.
  3. Quickly and carefully tilt the pan in a circular motion until the batter forms a round, thin layer in the pan, about 6-8 inches across. (Similar to a crepe). Cook about 1 to 2 minutes until the shell surface appears dry. Carefully turn the manicotti shell over using a spatula and cook for an additional 20-30 seconds. Stack cooked shells on a plate between waxed paper for later use.
Assembly
  1. Now it's time to assembly the Manicotti. Preheat your oven to 180 C. Take one of your shells and add a bit of Mozzarella cheese in the center.
  2. Spoon a generous helping of the ricotta cheese onto the shell.
  3. Now fold like a burrito and place in baking pan, seam side down. Repeat steps until your baking dish is full of manicotti shells filled with cheese mix.
  4. Pour pasta sauce over the top and sprinkle the remaining Mozzarella cheese over the top. Bake for 35 minutes.

  1. Boil the breasts or thighs until cooked, allow to cool then shred, discarding any skin and bones.
  2. To make the meat mixture: heat oil in medium skillet over medium high heat. Add chicken, onion and green chile peppers and saute until browned, then add taco seasoning and cook according to package directions.
  3. To make cheese mixture: in a medium bowl mix sour cream with cottage cheese and season with salt and pepper; stir until well blended.
  4. Preheat your oven to 175 C.
  5. To assemble: heat tortillas until soft. In each tortilla place a spoonful of meat mixture, a spoonful of cheese mixture and a bit of shredded cheese. Roll tortillas and place in a lightly greased 9x13 inch baking dish. Top with any remaining meat and cheese mixture, enchilada sauce and remaining shredded cheese.
  6. Bake for 30 minutes or until cheese is melted and bubbly.
  7. Serve with beans on the side and additional cheese if desired.
Recipe Notes

Boneless and skinless chicken breasts run about 87 Baht/kilo. For this recipe, 3 might set you back about 80 Baht. For the tortillas, I do not have a price on that, what I use was brought here from Phuket so I have no idea about the cost, considering that, I would say the cost per person, per meal is about $1.50 to $2, max. Make the cottage cheese yourself and save a lot of money as well.
