  1. Preheat your oven to 180 C (350 F) and line a baking sheet with parchment paper. Lay the 7 slices of bacon on the parchment, bake until crispy, 20 to 25 minutes. Remove from oven and chop into bite size pieces, set aside.
  2. While the first seven slices of bacon are baking, heat a medium size pan on medium heat and fry the 1 piece of bacon to start making the dressing. Cook until crisp, then add the garlic and shallot. cook until the shallot is soft, about 2 minutes or so. Remove the pan from the heat and whisk in the salt, mustard, vinegar, and olive oil.
  3. On a large platter, or using 4 serving bowls, add the lettuce, then bacon, then eggs.
  4. Return the dressing to low heat just to warm it then drizzle over the salad. Garnish with the chives and some black pepper as desired.
  5. Serve as a lunch or light dinner.

For the Wontons
  1. Combine the Wonton ingredients, except the wrappers and water in a mixing bowl until fully mixed.
  2. For the wrappers, there is two ways to do this, the simple, and the fancy. First thing, add some water to a small dish and keep near you, this is for sealing the wontons.
  3. For the simple way, place a wrapper on your palm, one corner towards you and the opposite corner pointed away from you. Place some pork filing in the center of the wrapper, 1/2 teaspoon to 1/2 tablespoon, you will get the feel for this as you make them. Now dip a finger into the water and wet the two edges that are farthest from you, then take the corner nearest you and fold over away from you to the opposite corner, to make a triangle, and use your fingers to seal the two edges. (I will have photos soon to show this). Set the wonton on a sheet of parchment paper. This completes the simple method, repeat until all the filling is used in each wrapper. OR, read the next step for the fancy method.
  4. For the fancy method, once you have the triangle shape, and the two edges sealed, take the two opposite corners and fold over each other and seal those. (I will have photos to show this soon as well). Set the wonton on parchment paper and repeat until all the filling is used in the wrappers.
For the Soup
  1. Add all of the Soup ingredients to a pot and bring to a boil, then reduce to a simmer and cook for 10 minutes, lets the flavors blend. Remove the ginger and garlic.
  2. Bring back to a boil, then lower in the wontons, and cook for 10 minutes. Ladle into bowls and top with spring onion.
  3. Serve.

  1. Cube the potatoes and add to a pot, cover with water and bring to a boil and cook until fork tender. When cooked, reduce heat to a simmer, drain about half of the water out of the pot. Pour in 1 1/2 cups of milk and stir into the potatoes.
  2. In a small bowl, add the remaining cold milk, and add 1/4 cup of cornstarch and mix until smooth to make a slurry, stir the slurry into the soup and stir and simmer until thickened to your liking. If using the optional bacon, stir that in as well. Use a bit more cornstarch and milk if needed to thicken to your liking.
  3. Stir in about 2 tablespoons or so of butter, simmer until the butter is melted and serve.

Variants: This is easily changed to your preference, adding any combination of parsley, spring onion, onion (chopped and sauteed), chives, bacon, you get the idea.

  1. In a bowl, add the wings or any other chicken parts as well as the garlic, shallots, ginger, light and dark soy sauces, sesame, white pepper, salt and sugar. Stir to coat the chicken. Cover with cling film and place in the fridge to marinate for 2 hours (minimum). Give the chicken an occasional stir while marinating. After 2 hours, place the chicken on the counter for about 30 minutes to get them up to room temp.
  2. Preheat your oven to 180 C. Foil line a baking dish and add a rack as well.
  3. Place the wings on the rack and if you have a oil sprayer, spray just a bit of oil on the wings and bake for 20 minutes, then flip them over, baste with the marinade and bake for another 10 minutes. Remove from oven and garnish with chives and chilies if desired. Serve with rice as a meal.

Chicken middle wing sections are 120 Baht/kilo, drumettes are 69 Baht/kilo. For 3 servings with drumettes, this is about 68 cents per serving, if using middle wing sections, for 3 servings, this is about $1.18 per serving. Overall, good value, serve with rice for a meal.

  1. In a medium bowl whisk together the mayo, sour cream, and mustard until well mixed. Add 3/4 of the chopped chives along with some salt and pepper to taste and whisk to mix. Mix in the cheese and bacon (reserve some bacon for a garnish if you like). Cover and chill for thirty minutes.
  2. Peel (if you want) and cube the potatoes into 1/2 inch pieces. Cook the potatoes in boiling water until fork tender. Drain and cool slightly. Fold the cooked potatoes into the chilled dressing. Garnish with the remaining chives and bacon.

  1. Brown chicken in a splash of olive oil in a frying pan and drain off excess fat.
  2. Blanch for about 2 minutes and vegetables like cauliflower, broccoli, asparagus, etc, before adding to the chicken.
  3. Add spring onions, red pepper, and mushrooms and cook for 5 minutes. I just used Straw mushrooms when I prepared this. When the vegetables are blanched, drain those and add to the chicken.
  4. Mix soup with 1 cup of milk and pour over browned chicken and vegetables, bring to a boil then reduce heat to a simmer, stirring quite often.
  5. Simmer for about 10 minutes to thicken the sauce a bit, add chives and serve over rice or boiled potato.
  6. My serving with some nice brown rice.

Chicken breasts will cost about 32 Baht/500 grams. For 3 servings this is about 32 cents per serving.
