  1. Prepare the refried beans from the shortcut below, I don't know how many cups or cans this makes, I make mine in batches of 500 grams (1 lb) dry beans. These take 8 hours, so you can either start the beans really early or make the casserole the next day, which is what I did.
  2. Preheat your oven to 180 C (350 F). Prepare the enchilada sauce according to the package or shortcut instructions.
  3. Lay a tortilla on your work surface, spread some refried beans in the middle, top with some shredded cheese.
  4. Fold or roll up the tortilla and place seam side down in a 7x11 baking dish. Repeat with the remaining 3 tortillas.
  5. Spoon some beans into each end of the dish.
  6. Spoon the rest of the beans over the top of the enchiladas and spread out evenly. Pour on the enchilada sauce, then top with the remaining cheese.
  7. Bake for 20-30 minutes to warm through and brown the cheese.
  8. Let casserole rest for a few minutes, then dig in and enjoy (see, I said it was nothing special to look at).

I will price this next time I get the cheese I used. For now I will say fair cost.

  1. In a large non stick pan, heat the oil then add the chicken, cook for about 4-5 minutes each side, remove from pan.
  2. Add the bacon and cook until just crisp, then add the garlic and jalapenos and fry until just fragrant. While the bacon is cooking, dice the chicken.
  3. Stir in the cream, salt, and pepper and let it simmer on low heat.
  4. Then stir in the cheese, then the chicken. Simmer for a few minutes to melt the cheese into the sauce.
  5. Pour the sauce over a large tray of hot french fries, hand everyone a fork, and dig in.

For the number of servings, this is low cost, only thing costly would be the cheese at about 180 Baht, but 10 servings, low cost overall.

Variant: 1. Make this a main dish served over rice or pasta and a salad on the side.

  1. Brown the ground beef in good sized pot with the onion and garlic, drain fat.
  2. Add the peas, carrots, corn, seasoning salt, pepper, cumin, and give it a quick mix. Then add the Worcestershire sauce, tomato paste, and chopped tomatoes with their juice, another quick mix.
  3. Add the broth, bay leaves, and macaroni. Give it a quick mix and set heat to just simmer. Cover pot and simmer until the pasta is cooked and tender, stirring occasionally.
  4. Top with the cheese, cover, and remove from heat for 10 minutes.
  5. Give it a stir and serve.

Beef will cost about 125 Baht/500 grams. For 4 servings, this is about 92 cents per serving.

  1. Preheat your oven to 180 C (350 F), get out a baking dish (I will verify the size when I make this).
  2. In a large mixing bowl, add all the ingredients, pour into your baking dish.
  3. Bake for 30 minutes or until the cheese is melted and the top is starting to brown.
  4. Remove from oven and let rest for 5 minutes, serve to your ungrateful family 😉
  5. Maybe next time when you ask, they will be more specific. Now if you ask what would you like for dinner and the family says "Kobe beef, Maine lobsters, and King crab" then fix this casserole, they will learn 😉

Shortcut: Condensed Cheese Soup.

Variants: 1. Substitute ham for cooked and cubed chicken or turkey. 2. Omit the meat and just make a vegetable casserole.

I have not done this yet, but will soon. When I was growing up, we had a wood stove we cooked on, and it had an oven, I used to make the baked potatoes but inserted a large nail (very clean) into the potato, theory is that when the nail heats up it cooks the inside of the potato faster, seemed to work. This is on my to make list and soon. This is based on one potato per serving as a side.

  1. Wash potato well to remove any dirt and grit, prick with a fork several times and place on a plate.
  2. Place in the microwave and 'nuke' the potato for 5 minutes on High power. Turn potato over and 'nuke' for another 5 minutes.
  3. Remove potato, cut nearly in half and spread apart, season with salt and pepper to your liking, mash just a bit with a fork, add the butter and 2 tablespoons of the cheese.
  4. Nuke again on High setting for 1 minute. Remove from the microwave and top with remaining cheese and sour cream to your liking, garnish with chopped chives or spring onion if desired.

  1. Preheat your oven to 180 C (350 F) and grease glass pie dish with butter and set aside.
  2. Heat a large non stick pan and brown the beef until no longer any pink is visible. Break up the beef as it cooks with the spatula.
  3. Add the taco seasoning and water and reduce heat, cook for a few minutes to reduce the liquid and makes a thick sauce.
  4. Add the beef to the prepared pie dish and spread to make an even layer.
  5. In a mixing bowl, add the eggs, cream, garlic, salt, and pepper, mix together then pour over the beef.
  6. Top with the cheese.
  7. Bake for 30 minutes or until the egg is set and the cheese starting to brown. Let rest for 5 minutes before slicing.
  8. Serve with toppings of sour cream, chopped tomatoes, chopped avocado, or toppings of your choice. Enjoy.

Figure about 125 Baht for the beef and about 90 Baht for the cheese. For 6 servings, this is about $1.05 per serving.

This is a quick meal to put together. One of the ingredients is Tasso Ham, which is a specialty of Cajun/Creole cooking of the southern US. If you do not have access to this type of ham, you can easily use Andouille sausage or thick cut smoked bacon and just add a bit of Cajun seasoning to taste. On my to cook list for sure.

  1. Follow the package instructions to prepare the grits but for what ever amount of water it calls for, cut that in half and use milk for the other half.
  2. Get your grits going, season with salt and pepper to taste, and stir often to make nice and creamy grits. When the grits are done, add in Cheddar to your liking and stir in, set aside but keep warm.
  3. Get everything else prepped, measured, and set out and ready to go, this will come together quickly.
  4. In a large non stick pan on medium high heat, heat the oil and butter. When hot, add the ham and saute until crispy. Add the onion and bell pepper and saute until the onion is translucent then add the garlic and cook for 1 minute.
  5. Add the shrimp and saute for 1 to 2 minutes or until all the shrimp are pink. Pink shrimp are tender, over cooked shrimp are tough. Remove the shrimp when pink and set aside.
  6. Stir in the white wine and let it reduce. When it has reduced, slowly stir in the cream, season with salt and pepper, and if you used sausage or bacon, season to taste with Cajun seasoning. Let sauce reduce to thicken.
  7. Divide the grits between two plates, divide the shrimp onto the grits, pour sauce equally over each plate, top each plate with chopped spring onion greens. Serve.

I will say low cost for now but will price this when I get the shrimp again, I will be using large shrimp for this.

  1. Preheat your oven to 190 C (375 F). Light grease with butter four 10 ounce ramekins or four 10 ounce Pyrex dishes.
  2. In a mixing bowl and the hash browns and cheese and mix to combine, sprinkle on the taco seasoning and toss to mix that in. Divide the mixture into the 4 ramekins, press down on the bottom and sides making a depression in the center, place the dishes on a baking sheet.
  3. Bake for 10 minutes. Remove from oven and crack an egg into each dish, season with salt and pepper to your liking. Bake for another 10-20 minutes until the whites are fully set and the yolk is starting to firm up but not hard.
  4. Serve.

  1. Preheat your oven to 180 C. Get out a deep dish Pyrex pie dish or a 7x11 baking dish, I will verify when I make this.
  2. To poach the fish, heat a non stick pan and add the milk, onion, bay leaves, and cloves. Heat to just before a boil, add the fish and simmer until the fish is cooked through and flakes with a fork, about 8 to 10 minutes.
  3. Remove the fish to a plate, strain the milk mixture and pour into a bowl, discard the contents of the strainer.
  4. Flake the fish into large pieces into the baking dish, Add the shrimp and arrange the quartered eggs on the top. Sprinkle the parsley on the top.
  5. To make the sauce, melt half of the butter in a small pan, stir in the flour and cook for 1 minute, stirring, then remove from heat. Stir in the reserved milk to get a smooth sauce. Return the pot to heat and bring to a boil and cook 5 minutes, stirring continuously, until it coats the back of a spoon. Remove from heat, season with salt, pepper, and nutmeg.
  6. Pour the sauce over the fish. Top the pie with mashed potatoes, push the mash right up to the edges to seal, fluff the top with a fork then sprinkle on the cheese.
  7. Bake for 30 minutes then let rest for 5 minutes, serve.
Recipe Notes

Figure about 50 Baht for the whitefish, Pangasius, and about 200 Baht for salmon. For the cheese, figure about 90 Baht. For 4 servings, this is about $2.50 per serving.
