  1. Add all ingredients to your slow cooker and mix. Set to High setting without using the lid, until mixture thickens, about 10 hours. Stir occasionally.
  2. Blend with an immersion mixer until smooth, about 30 seconds.
  3. Strain ketchup through a fine mesh strainer to remove seeds. Pour into a jar and when room temperature, seal jar and store in the fridge.

For the Wings
  1. Preheat oven to 220 C. Prepare a parchment lined or foil lined baking tray with a baking rack on top.
  2. Use paper towels to thoroughly pat dry the chickens wings. In a bowl, mix together the baking powder, salt, and pepper. Add chicken wings and fully coat with the mixture.
  3. Place wings across the baking rack, without overlapping. Bake for 30 minutes. Remove from oven, flip over the wings, and bake again for another 30 minutes, or until fully cooked and golden.
For the Sauce
  1. In a pan, combine all ingredients except celery salt. Stir and reduce on medium heat until thickened. Toss with wings. Top with celery salt.
Recipe Notes

Wing prices can vary from 90 Baht/kilo for whole wings, 80 Baht/kilo for drumettes, and 125 Baht/kilo for middle wing sections. I like the drumettes as they have more meat on them, I will price this on 80 Baht. For 2 servings, this is about $1.17. I would assume this could be 4 servings if served with a side of slaw and some corn on the cob, for about 59 cents per serving.

I know people that swear by Old Bay Seasoning, I think it is over rated. I do have some in the spice cabinet since I found some in Phuket so I bought a bottle for use in some other recipes, then I came across this recipe to make a substitute.

  1. Preheat your oven to 190 C. Grease a large baking dish with a little bit of butter.
  2. Cook the stuffing according to instructions then spread that in the baking dish, place the chicken on top, add the mushrooms around the chicken.
  3. Mix the can of soup (and hopefully you use the shortcut) and mix with 1/2 can of milk, pour this over the baking dish, season the top with the celery salt, onion powder, garlic powder, poultry seasoning, and black pepper, to taste.
  4. Cover with foil and bake for 25 minutes, ten remove foil and bake for 15 minutes or until chicken is cooked through.
  5. Serve on a bed of hot fresh cooked pasta, with a salad and a fresh cooked vegetable for a complete meal.
Recipe Notes

4 quarters would be less than 72 Baht/kilo, but I use 72 for the estimate. Imported Stove Top stuffing is going to be pricey, Thailand does import lower priced stuffing at about 90 Baht per package, how this compares to Stove Top brand, I cannot say. The soup will run about 52 Baht for the can, use the shortcut and you can reduce this to 18 Baht for a can. For 4 servings, this comes out to about $1.60 per serving. If using the shortcut on the soup, this is about $1.33 per serving. Not big savings, but it is savings. I look forward to making this.

Variants: Instead of mushrooms, use sliced celery or chopped onion.

  1. Place chopped celery and oil into a 2 quart microwave safe bowl. Cover and cook on HIGH for 4 minutes.
  2. Add remaining ingredients and whisk until smooth.
  3. Microwave for 2 minutes, stopping to whisk after 1 minute and again when finished, if not thick or to your desired consistency, microwave for another minute and whisk again, continue until thickened.

Most recipes will just call for a can of condensed soup, some recipes (or if you just want to make the soup by itself) call for plus 1 can of water. One can equals 1 1/4 cups of water. But as a healthier alternative to using water, try using whey if you recently made cottage cheese, or water used to boil potatoes. Milk can also be used in place of water to make a creamier soup.

  2. Use 2 tablespoons for every 1 dry packet needed.
  3. To make salad dressing, together 2 tablespoons of dry mix with 2/3 cup olive oil, 1/4 cup white vinegar, and 2 tablespoons water.

  1. Boil potatoes until tender, drain.
  2. Cook bacon in skillet until crisp. Remove and chop. Cook and stir onion in bacon fat until tender. Stir in flour, sugar, salt celery seed and pepper. Cook over low heat, stirring constantly until mixture is bubbly. Slowly add water and vinegar and heat to boiling stirring constantly. Remove from heat and combine with drained potatoes and bacon until potatoes are completely coated.
