This idea comes from a good friend. I love pinto beans as a side dish, in chili and burritos, and as refried beans. This is a side dish and sounds very tasty. All measurements are approximations until I make this and verify the amounts. I am going to pressure the beans but the canned amount will be stated as well. All measurements are approximations until I make this and verify the amounts. I am going to pressure the beans but the canned amount will be stated as well.   1. Prepare the beans either by draining and rinsing 2 cans or by cooking from dry beans. From dry, drain after cooking them.
  2. In a large non stick pan on medium high heat, when hot, add the sausage, garlic, and onion. Cook, breaking up the sausage with the spatula, until almost cooked through. Drain off most of the fat, not all, as that is flavor for the beans.
  3. Add the bell pepper, green chilies, tomatoes, and mix together.
  4. Add the beans and Cajun seasoning, mix together.
  5. Simmer until the bell pepper is tender.
  6. Serve as a side dish.

Instructions
  1. Slice the sausages on an angle, about 1/4 inch thick slices. Heat a splash of olive oil in a large non stick pan and cook the sausage until nicely browned. Remove from the pan and set aside.
  2. Same pan, heat a little more olive oil then add the onion, peppers, and garlic. Season with salt, pepper, and Cajun seasoning to taste, and cook until the veggies are just soft.
  3. Add the stock to the pan and bring to a boil.
  4. Add the sausage and diced tomatoes, stir occasionally until it returns to a low boil.
  5. Add the shrimp and simmer until they turn pink then remove from heat.
  6. Serve over rice or with a baguette. Enjoy.

I will say Fair cost for now until I can locate that particular sausage or a suitable substitute.

Shortcut: Cajun Seasoning.

Variant: 1. Use Creole seasoning in place of the Cajun seasoning.

This is a quick meal to put together. One of the ingredients is Tasso Ham, which is a specialty of Cajun/Creole cooking of the southern US. If you do not have access to this type of ham, you can easily use Andouille sausage or thick cut smoked bacon and just add a bit of Cajun seasoning to taste. On my to cook list for sure.

  1. Follow the package instructions to prepare the grits but for what ever amount of water it calls for, cut that in half and use milk for the other half.
  2. Get your grits going, season with salt and pepper to taste, and stir often to make nice and creamy grits. When the grits are done, add in Cheddar to your liking and stir in, set aside but keep warm.
  3. Get everything else prepped, measured, and set out and ready to go, this will come together quickly.
  4. In a large non stick pan on medium high heat, heat the oil and butter. When hot, add the ham and saute until crispy. Add the onion and bell pepper and saute until the onion is translucent then add the garlic and cook for 1 minute.
  5. Add the shrimp and saute for 1 to 2 minutes or until all the shrimp are pink. Pink shrimp are tender, over cooked shrimp are tough. Remove the shrimp when pink and set aside.
  6. Stir in the white wine and let it reduce. When it has reduced, slowly stir in the cream, season with salt and pepper, and if you used sausage or bacon, season to taste with Cajun seasoning. Let sauce reduce to thicken.
  7. Divide the grits between two plates, divide the shrimp onto the grits, pour sauce equally over each plate, top each plate with chopped spring onion greens. Serve.

I will say low cost for now but will price this when I get the shrimp again, I will be using large shrimp for this.

For the Chicken Seasoning

  1. Slice the Andouille sausage in half lengthwise and slice half moons 1/4 inch thick. For regular pork or beef sausage, just slice 1/4 inch thick. Set aside.
  2. In a large non stick pan, heat a splash of olive oil, when hot, add the cubed chicken and season with the Chicken Seasoning spices to taste, just a bit of each spice will do. Lightly brown the chicken, no need to cook through, over cooked chicken = tough chicken. When lightly browned, remove from the pan to a large bowl and set aside. If there is water in the pan, pour that off.
  3. Same pan, add the sausage and brown that up, remove from the pan and add to the bowl with the chicken and set aside.
  4. Same pan, add the bell peppers, saute for about 5 minutes then add the garlic and shallots. Saute for about 15 minutes or until the bell peppers are just softened yet still crunchy. If using the the optional mushrooms, add those now and saute to just soften them. Remove from heat and set aside. Now follow either Method 1 or Method 2 for the final preparation.
Method 1
  1. In a large pot, add the stock, cream, chicken and sausage, bell peppers from the pan, and the pasta. Bring to a boil then reduce to a simmer and cook for 25 to 30 minutes uncovered, to reduce the liquid amount, stirring often.
  2. Stir in the spring onion and Parmesan, simmer for 5 more minutes. Serve and enjoy.
Method 2
  1. In a pot heat the stock to boiling and cook the pasta until tender. Drain.
  2. While the pasta is cooking, add the sausage and chicken to the pan with the bell peppers, use low heat and just heat everything through.
  3. Add the drained pasta to the pan and mix together well, then add the cream and just simmer for 10 to 15 minutes. Serve and enjoy.
Recipe Notes

The chicken will cost between 30 and 60 Baht, 500 grams/1 kilo, and the sausage, going with Cumberland, 750 grams is about 267 Baht. For 6 servings, this is about $1.60 per serving.

  1. Preheat your oven to 180 C. Get out a casserole dish or a baking dish.
  2. Place everything in a pot on the stove, even a good shaking of Cajun seasoning, except the chicken. Heat to just about a simmer for about 5 minutes then remove from heat.
  3. While the pot is heating, place the thighs in the baking dish. Sprinkle some Cajun seasoning to your desired taste on the thighs. Pour the sauce contents from the pot over the chicken.
  4. Bake for about an hour or until the chicken is chicken is cooked through.
  5. Serve with mashed or boiled potatoes and a vegetable.
Recipe Notes

Going with 4 chicken thighs for 4 servings, this probably less than 70 Baht. For 4 servings, this is about 52 cents per serving.

  1. Heat a pot of salted water to boiling, add the pasta and cook until just tender, drain, set aside.
  2. In a bowl, mix together the chicken and the Cajun seasoning.
  3. Heat a large non stick skillet with a splash of olive oil. Add the chicken and saute for 5-7 minutes, turning as needed to brown them up nicely.
  4. Sprinkle the spring onion over the chicken, pour over the cream, add the sun dried tomatoes, basil, garlic powder, and salt and pepper as desired.
  5. Heat to a near boil and add the pasta and mix in well.
  6. Serve, garnish with Parmesan cheese.

Figure about 35 Baht for 500 grams of chicken, for 4 servings, this is about 30 cents per serving, great value.
