Sounds interesting and is on my to cook list. First recipe I have seen for cheese to be used with frog legs. I buy local caught frogs and use the legs only, but the rest of the body is used by some family members so there is very little waste.

  1. Preheat your oven to 180 C (350 F). Fit some foil or parchment paper in the bottom of a 7x11 baking dish. (I will verify the size of the dish needed.)
  2. Add the ingredients from butter down to salt into a bowl and mix well. Place the bread crumbs in a shallow bowl.
  3. Dip a frog leg into the cheese and egg mixture coating it well, let excess drip off. Roll the leg in the bread crumbs, then place in the baking dish.
  4. Repeat for remaining legs, keeping the legs evenly spaced in a single layer in the dish. Spoon any remaining cheese egg mixture evenly over the legs.
  5. Bake until golden brown, 30-50 minutes. (I will verify the time when I make these.)
  6. Serve.
Recipe Notes

I bought 3 whole (skinned, cleaned) frogs at the village market for 60 Baht ($1.81) and just the legs, with feet removed, came out to 190 grams (6.7 oz). I will say 6 legs is a serving, so this is fair priced. (The rest of the frogs, those went to a brother in law for him to cook, nothing wasted, as I would not have bought them to just remove the legs and discard the rest.)

  1. Add the cream cheese to a mixing bowl, use a potato masher and mash up the cheese to make it nice and soft, set the masher aside.
  2. Use a sturdy spoon and fold in the pickles, juice, and dill until combined, season with salt and red pepper flakes as desired.
  3. Lay out two slices of bread, spread cream cheese on each slice, top with remaining slices of bread.
  4. Enjoy.

Caroline Cream cheese is about 120 Baht. For two sandwiches, this is about $1.90 per sandwich.

  1. Cook the breakfast sausage in a non stick pan until cooked through and fat drained.
  2. Grease with butter your slow cooker insert, bottom and sides.
  3. Crack the eggs into a large mixing bowl, whisk until well mixed and frothy is ok. Add the milk and mustard, and season with salt and pepper as desired, whisk to combine.
  4. Place the cubed dried bread in an even layer in your slow cooker, then add the sausage, cheese, onion, and bell pepper.
  5. Pour in the eggs, push down the other ingredients as needed.
  6. Cover and set your slow cooker to Low setting for 6 to 7 hours. Check at 5 hours to be on the safe side, the dish is done when the eggs are set and the top is golden brown.
  7. Spoon into bowls and ad some nice toast and you have a meal, regardless of the time of day.

  1. Fry the sausage in a pan until cooked through.
  2. Butter the bread slices on one side only. Using the same pan the sausage was cooked in, fat drained and wiped with a paper towel, or another pan that is non stick,
  3. Place a slice of bread, butter side down in the hot pan, and a slice of cheese and 4-5 sausage links, then the other slice of cheese, cover with the remaining slice of bread, buttered side up.
  4. Cook until golden brown on the bottom, then carefully flip and cook the other side until gold brown. Cut in half and serve.

Variant: 1. If using thick links, after they are cooked through, slice in half lengthwise and position on bread, first on cut side down, next cut side up, next one cut side down, etc, until the bread is covered. 2. Add a fried egg before topping with the last slice of bread.

  1. In a small bowl, mix together the butter and Parmesan cheese.
  2. Spread the butter mixture on all slices of bread, place 4 slices butter side down on wax paper, the other 4 slices, set aside butter side up.
  3. Top the 4 slices that are butter side down with a slice of Provolone and Mozzarella, top that with the other 4 slices of bread and place those butter side up.
  4. Heat a griddle or non stick pan, then working in batches, add a sandwich or two and cook until golden brown on the bottom, then flip and cook the other side until golden brown. Cut in half and serve.

  1. Drain the sardines and place in a bowl, add the mayo and chopped pickle. Mix with a fork, mashing up the sardines. If using homemade sardines, use about 3 pieces.
  2. Lay out the 4 slices of bread, spread mayo on each slice. On 2 slices, add a layer of sliced tomato, spread on 1/2 the sardine mixture, top that with lettuce leaves, then add a layer of sliced egg, season with salt and pepper as desired. Top with a slice of bread, mayo side down. Cut in half and enjoy.

One tin of sardines in olive oil at Tesco is 59 Baht. For two sandwiches, 1 per serving, this is about 92 cents per serving. I do list the shortcut for homemade sardines in olive oil, but the cost of the oil does not really reduce the cost of the sardines overall.

I made these last night, have not had one in 12 years or so, true comfort food. Bologna is here, mainly just eaten as a snack item straight from the fridge. My wife very much enjoyed these. I did not make anything that is not here, just prepared it in a way the Thais are not accustomed to, the family really likes it when I use common items to make a "new" dish they have not had before. This is a nothing more than a guide, not a recipe. Keep in mind, Thai bologna is smaller diameter than in the US.

  1. In a non stick pan, heat a tiny amount of olive oil and add the bologna slices, fry for a minute or two each side or until the edges are starting to brown.
  2. Spread mayo on each slice of bread, add some lettuce to one slice, add the bologna slices on top of the lettuce, then add some cheese on top of the bologna. Top with the other slice of bread.
  3. Cut in half and enjoy.

A pack of 10 slices of bologna will cost about 79 Baht, for 2 sandwiches (2 servings), this is about $1.25 per serving. Other items used are minimal.

  2. Lay out two slices of bread, spread Thousand Island dressing on each slice.
  3. On one slice, place sliced Swiss cheese, then sliced imitation crab.
  4. Place the second slice on top of the sandwich, Thousand Island dressing downwards onto the sandwich. Pick up sandwich and spread butter on each side.
  5. Place the sandwich in the hot pan and cook until the bottom is golden brown, flip and cook the other side.
  6. Remove from heat, enjoy.

  1. Heat your oven to 180 C. Line a baking sheet with foil or parchment paper. Cut the bread into 1/3 to 1/2 inch cubes. Toss the cubes with 1 tablespoon of olive oil. Spread the bread cubes in a single layer on the baking sheet. Bake until golden brown, 2 to 3 minutes but keep an eye on them. Remove from the oven and set aside. There, you just made croutons which will be used for a topping at the end.
  2. Heat 4 tablespoons of olive oil in a large non stick pan, when hot, add the onion, garlic, salt, and red pepper, cook until the onion is golden brown.
  3. Remove the pan from heat and mix in the parsley, capers, and 1 to 2 teaspoons of lemon or lime juice. Set aside.
  4. Cook the pasta in a pot of boiling salted water until tender. Reserve 3 tablespoons of the pasta water and drain the rest.
  5. In a medium bowl, add the egg yolks, slowly whisk in the reserved pasta water, then whisk in the remaining 1 tablespoon of olive oil.
  6. Place the pan back on low heat and add the well drained pasta to the pan, pour the egg mixture over the pasta and toss to combine the pasta with the egg mixture and the contents in the pan. Cook for 2-3 minutes to warm everything through.
  7. Divide among 4 bowls and top with the croutons you made and a sprinkle of Parmesan cheese.

For the Stuffing
  1. Heat the oil in a wok or non stick pan and add the garlic and ginger, when fragrant, add the white spring onion and green chilies, stir fry until the onion and chili are softened, then add the chicken, black pepper, and salt and stir fry to mix together.
  2. Add the carrot, bell pepper, cabbage, soy sauce, sugar, vinegar, and the green part of the spring onion, stir well on high heat for 30 seconds and remove to a bowl and set that aside until it cooled.
To Assemble
  1. Take a slice of bread and lay it on a flat surface, with a rolling pin, roll the bread into a thin flat slice.
  2. Spread some mayo on the slice, place about 2 teaspoons of the chicken stuffing on the edge of the slice nearest you, then tightly roll the bread slice away from you, you can use water to make the last edge stick together. Place on a plate, seam side down. Repeat for remaining slices.
  3. Heat a non stick pan with a splash of cooking oil on medium heat, and fry the spring rolls, turning often until golden brown.
  4. Serve.
