  1. Note about the tuna. For canned, use 2 1/2 to 3 cans, drained well. For fresh cooked, go with 425 grams (15 oz).
  2. Preheat your oven to 180 C (350 F). Grease with butter or olive oil with an oil sprayer a loaf pan.
  3. In a large mixing bowl, add all the ingredients, seasoning with salt and pepper as desired, as well as Tobasco sauce. Use your hands and mix well.
  4. Pack mixture into the prepared loaf pan.
  5. Place in the oven and bake for about 45 to 50 minutes or until the top is golden brown.
  6. Cool for 10 minutes before slicing. Serve with sides of your choice and enjoy.

Low cost, even more so if using fresh cooked tuna.

Variants: 1. Use red bell pepper in place of green. 2. Saute the bell pepper and onion prior to mixing in with the tuna. 3. Add chopped hard boiled eggs. 4. Add sliced green olives. 5. Add chopped fresh parsley or cilantro.

  1. Heat a large pot of salted water to a boil. Once boiling, add the pasta. The type of pasta is your choice, long like spaghetti, or shorter types.
  2. While the pasta is cooking, heat a large non stick pan with 2 tablespoons of the butter, when melted and hot, add the smashed garlic. Saute until garlic is softened, smash the garlic as it cooks as well.
  3. Add the cherry tomatoes into the pan, season with a pinch of salt. Saute to soften the tomatoes.
  4. When the pasta is almost tender, take a cup of pasta water and add to the pan along with the remaining butter. Stir to melt the butter into the water and mixed into the garlic and tomatoes, crushing some of the tomatoes as you stir. This will make a silky butter sauce.
  5. Transfer the pasta to the pan using tongs or a pasta fork, or just a large slotted spoon.
  6. Mix the pasta with the sauce, season with salt and red pepper flakes as desired. Mix in some Parmesan cheese to your liking.
  7. Optionally, you can add a handful or two of bread crumbs to the pasta and mix that in.
  8. Serve with additional Parmesan cheese for garnish if desired.

  1. Heat a skillet on medium heat. Beat the egg in a shallow bowl or plate, place some flour on another plate, and some bread crumbs on another plate.
  2. When the skillet is hot, coat the steak in beaten egg, then coat with flour, back into the egg to coat it again, then into the bread crumbs, and finally into the hot skillet.
  3. Cook until golden brown on the bottom, flip the steak and cook the other side.
  4. Serve with a lemon wedge on top and sides of your choice.

  1. Preheat your oven to 180 C (350 F) and lightly grease a 9x13 baking dish.
  2. In a large mixing bowl, add the pork, ham, eggs, bread crumbs, milk, salt, and pepper. Mix together well then place into the prepared baking dish and shape into a loaf.
  3. Bake for 90 minutes.
  4. While the ham loaf is baking, go ahead and mix together the topping. In a bowl, add the brown sugar, mustard, and vinegar and mix well. During the last 15 minutes of baking, pour the topping over the loaf and continue baking for the remainder of the time.
  5. Remove from the oven and let rest for 5 minutes before slicing, serve.

  1. In a large mixing bowl, add the 11 ingredients, mix well. Shape into 1 1/2 inch meatballs. Place meatballs in a container, cover, and place in the fridge for 1 hour.
  2. When ready to cook, heat the oil in a large non stick pan, when hot, add the meatballs, work in batches if needed, brown the meatballs all over, turning gently until they are firmed up.
  3. Once browned, add the stock, cover, and reduce heat to a simmer. Cook for 40 minutes or until cooked through, turning occasionally.
  4. When cooked through, remove the meatballs with a slotted spoon to a platter. Mix the cornstarch and water, slowly whisk into to the pan and cook and whisk until thickened to make a gravy.
  5. Serve meatballs with pasta, mashed potatoes, or rice, with the gravy spooned over the top.

  1. Prepare the Salisbury steaks by mixing together the beef, , egg, tomato paste, mustard, Worcestershire sauce, garlic powder, bread crumbs, salt, and pepper. Shape into 4 round or oval patties.
  2. Heat the butter in a large non stick pan, add the patties and cook for 4 to 5 minutes each side until well browned. Remove from the pan and set them aside.
  3. In a small sauce pan, prepare the gravy packets per the package instructions.
  4. Using the pan you cooked the patties in, add the onion, mushrooms, and thyme. Saute until the onion is translucent and soft, and the mushroom well wilted and starting to brown. Reduce heat to a low simmer and pour in the gravy from the sauce pan and stir in the soy sauce.
  5. Add the patties to the gravy, cover and cook for 10 to 15 minutes, turning once, until cooked through.
  6. Season the gravy to taste with salt and pepper as desired, serve with mashed potatoes.

  1. Preheat your oven to 180 C.
  2. In a small bowl, add the milk and bread crumbs and let them soak.
  3. In a large bowl, add the beef, salt, pepper, onion, egg, and bread crumb mixture, mix together with a large spoon or your hands.
  4. Add the meat mixture to a 9 inch pie dish, and pat down evenly. Bake for 30 minutes.
  5. While it is baking, cook your potatoes and prepare your mashed potatoes.
  6. When the meat has baked 30 minutes, remove it from the oven, very carefully pour off the fat from the dish, and wipe the pan side and bottom clean as well.
  7. Now top the meat with the mashed potatoes, spread evenly, sprinkle with cheese then sprinkle with paprika. Place back in the oven for about 15 minutes or until the cheese is melted and the potatoes heated through, serve.

  1. Preheat your oven to 250 C. Rub a large baking dish with olive oil or use a olive oil mister.
  2. In a large bowl, combine ground beef, spring onions, egg, bread crumbs, cilantro, soy sauce, sesame oil, ginger, season with salt and black pepper to taste, mix well to combine. Use your hands to mix and shape mixture into 12 balls.

  1. I grind meat I purchase so I know the fat content and freshness of the meat. For this recipe I cut it nearly in half for a first test and used pork shoulder which is the perfect amount of fat.
  2. In a very large bowl, mix all Meatball ingredients together by hand but don't over work it.
  3. Form into ping pong size balls with your hands as evenly and smooth as possible, for dinner meatballs shape into larger ones. I am planning to make these and I am leaning towards some dinner size and some party size. I made dinner size meatballs, this is 12 from just half the meat mixture.
  4. You may have as many as 60-70 party size meatballs if just making those.
  5. Preheat your oven to 180 C (350 F).
  6. Place meatballs on rack of broiler pan, evenly apart but not touching. Or use the top coil with a counter top oven.
  7. Bake for about 25 minutes or until well browned and fully cooked for the party size meatballs, large dinner size meatballs may take 30 minutes or more.
  8. If freezing, allow meatballs to cool to room temp, bag in single layers then freeze.
For Serving as Appetizers
  1. Place the meatballs, just cooked, thawed if frozen, amount is up to you, in your slow cooker, top that with the amount of pasta sauce to cover them and mixed in, and heat on Low setting until good and hot. Serve.
For Serving Dinner Meatballs
  1. Use as needed for Spaghetti & Meatball type dishes. If using frozen, just thaw out first then use as needed.

Figure about 500 Baht/2 1/2 kilos of beef. Source it locally and you may get it for less. Figure about 150 Baht for the Parmesan cheese. For 30 servings of party size, this is about 63 cents per serving. Use pork and much less.

  2. Roll meat mixture into golf ball size meatballs, squish a cube of cheese into a meatball and form the edges over the cheese to make it into a meatball shape again.
  3. Arrange all the meatballs in your slow cooker, pour in the tomato sauce. Cook on high setting for 2 to 2 1/2 hours. Serve over pasta.
