  1. In a large mixing bowl, add the 11 ingredients, mix well. Shape into 1 1/2 inch meatballs. Place meatballs in a container, cover, and place in the fridge for 1 hour.
  2. When ready to cook, heat the oil in a large non stick pan, when hot, add the meatballs, work in batches if needed, brown the meatballs all over, turning gently until they are firmed up.
  3. Once browned, add the stock, cover, and reduce heat to a simmer. Cook for 40 minutes or until cooked through, turning occasionally.
  4. When cooked through, remove the meatballs with a slotted spoon to a platter. Mix the cornstarch and water, slowly whisk into to the pan and cook and whisk until thickened to make a gravy.
  5. Serve meatballs with pasta, mashed potatoes, or rice, with the gravy spooned over the top.

Figure about 150 Baht for the beef and 30 Baht for the pork. For 6 servings, this is about 88 cents per serving.

  1. Heat the olive oil in a non stick pan. While that is heating, place the flour in a large bowl add season with salt and pepper to taste, mix in the beef to coat. When the oil is hot, add the beef to the pan in batches to brown all sides, not cooking it through just browning it a bit. Place browned beef in your slow cooker.
  2. Once all the beef is browned and in the slow cooker, pour in the stock, diced tomatoes (these can be canned or fresh), Worcestershire sauce, vinegar, and stir, then add the potatoes, carrots, onion, celery, oregano, garlic, and bay leaf.
  3. Stir to mix then cover and set the slow cooker to Low setting and cook for 8 hours.
  4. Whisk together the cornstarch and water, pour into the slow cooker and stir to mix into the stew, cover the pot and set to High setting for another 30 minutes to an hour to thicken the stew.
  5. Serve with biscuits or bread.
Recipe Notes

Figure about 300 Baht for the beef. For 6 servings this is about #1.47 per serving.

Shortcut: Tenderize Beef with Tomatoes.

Variant: 1. Instead of adding potatoes to the stew at the beginning, serve the stew over mashed potatoes. To do this, increase the stock used by a cup to allow a soupier stew that will go well with mashed potatoes.

  1. Preheat your oven to 180 C. You will need a deep oven proof pan with a oven proof lid, if no lid, just use foil.
  2. Add salt and pepper to the flour and coat the cubed beef. Brown the beef in the deep ovenproof pan with a splash of olive oil. Remove the beef from pan.
  3. Add a bit more oil to the same pan and cook the onions until translucent, then add the carrots and celery and cook for another 3-5 minutes, then add the garlic and cook for 2 minutes more.
  4. Add in the tomato puree and rosemary and stir in, cook for a further 2-3 minutes. Add the chopped tomato and cook for 2 minutes. Add the red wine, simmer to reduce slightly. Add the beef stock and allow to reduce for about 10 minutes.
  5. Cover the pot with a lid and place in the oven for 1 1/2 to 2 hours.
  6. Remove from the oven and remove the lid or foil. Give the stew a quick mix, smooth out the stew and cover with thinly-chopped peeled potatoes, arranged so they are overlapping slightly. Drizzle with the butter, and season to taste with salt, pepper, and dried thyme.
  7. Increase the oven temp to 200 C, leave the pan uncovered and place in the oven again and bake for another 45 minutes or until the potatoes are tender.
  8. Remove from the oven, sprinkle the Gruyere cheese over the potatoes. Place the oven again for 5 to 10 minutes on until the cheese is bubbly.
  9. Serve.

  1. Melt butter in a pot over low heat, add onions and stir, cover and stir occasionally, cooking for about 30 minutes.
  2. Add the broth and Worcestershire sauce and stir in and increase to a boil then reduce to a simmer. Simmer uncovered for about 30 minutes and the broth will reduce a lot.
  3. While the broth is reducing, preheat your oven to 180 C and grease a baking dish, I would say an 8x8 or 7x11, with butter. Lightly toast the French bread, you can do that while heating the oven.
  4. Pour the onion mixture into the prepared baking dish. Add the toast slices to the top in an even layer and space them out about 1/2 inch apart.
  5. Add the Mozzarella over the toast, then the Parmesan. Bake for 20-30 minutes or until the cheese is melted and nicely browned.
  6. Let rest for a few minutes, serve as a side dish.
Recipe Notes

Cheese is the only costly items here. Figure about 90 Baht for the Mozzarella. For 4 servings, this is about 66 cents per serving.

  1. In a large mixing bowl, add the beef, 1/4 can of the mushroom soup, bread crumbs, egg, onion, and steak seasoning. Combine thoroughly, divide the mixture into 4 parts, then form each part into an oval.
  2. In a large non stick pan, heat the oil and 1 tablespoon of butter. Add the patties and brown on each side then remove to a plate.
  3. Remove the pan away from the heat and add the remaining butter and cognac (or wine), then return the pan to heat, when hot, saute the mushrooms until browned, then stir in the stock and gravy mix, then stir in the remaining mushroom soup. Add the patties to the pan and spoon the gravy over them, cover the pan and simmer for 20 to 25 minutes to thicken the gravy and finish cooking the patties through.
  4. Serve with mashed potatoes, pasta, or even rice.

  1. Place the meat on the bottom of the slow cooker. Top with sliced onion. For even better flavor, sauté onion in skillet until golden brown, then add it to the slow cooker. Top with cut up bell pepper. Sprinkle with salt, pepper and garlic.
  2. Mix the broth with Sriracha, pour over the peppers and beef. Cook on Low setting for 7-8 hours or High setting for 3 1/2 to 4 hours.
  3. Mix the 1/2 cup water and corn starch. Add 1 cup of liquid from the meat & pepper mixture and cook on medium heat until boiling, then cook 2 minutes past boil to remove the cornstarch flavor. Add this mixture back to the meat and bell peppers. Sprinkle with chopped parsley and stir.
  4. Serve hot over rice, pasta, or mashed potatoes.

  1. For the kidney beans, you can use a can or if making from dry, you will need to cook those first, once cooked use 1 1/2 cups of beans in place of a can. BUT, the kidney beans can be substituted with any type of beans you prefer, or any vegetable you prefer.
  2. For the condensed cream of mushroom soup, first, making the shortcut is highly recommended and very easy. If you want to use cream of celery, add celery in place of the beans, that would be delicious! Shortcut for that soup is listed in the Recipe Notes section.
  3. In a bowl, mix together the soup and the stock, amount of stock needed is dependent on how much sauce you would like. Set this aside.
  4. Layer in this order into your slow cooker, first the browned and drained beef, then onions, then carrots, then beans or a vegetable of your choice, then the potatoes on the top.
  5. Pour the soup mixture over the top, cover, and cook on Low setting for up to 10 hours. You are looking for tender potatoes, can check at 8 hours.
  6. About 10 to 20 minutes before you are ready to serve, sprinkle on the cheese, cover, and let it melt. Cheese is optional, if you do not want to use cheese, just omit that.

The beef will cost about 200 Baht/kilo. The cheese, about 90 Baht. For 4 servings, this is about $2.13 per serving. If you can get local sourced beef from a village market, you can reduce the cost per serving.

  2. Mix together remaining ingredients except the mashed potatoes and pour over the knuckles. Cover and cook on Low setting for 8 hours without removing the lid.
  3. Remove the knuckles from the slow cooker. Scoop out some sauerkraut and place on one side of each plate, place a pork knuckle on top of the kraut, then place a scoop of mashed potatoes on the other side of the plate. Serve.
Recipe Notes

These are available at Makro, frozen, each is 800 grams and cost is 200 Baht each. And I recently seen them 4 in a bag, frozen in Tesco, cannot remember the price. If serving one knuckle for 2 people (easily done),  the cost would be about $2.95 per person. I will add  the cost of sauerkraut when I find that. More expensive than other meals listed here but is a great treat for yourself.
