  1. Heat 1 tablespoon of the oil in a large heavy pan, when hot, brown the roast on both sides while seasoning with salt and pepper. Remove the roast to a plate and set aside.
  2. Same pan add the remaining oil and add the onions and cook until they just start to soften and wilt then add the garlic and cook a few more minutes until the onions are translucent.
  3. In a measuring cup, add the hot water and the bullion cubes and mix to dissolve, then pour that into the pan, also to the pan, add the beer, brown sugar, vinegar, and stir to mix well.
  4. Pour the mixture, carefully, into your slow cooker insert, place the roast on top of that mixture. Switch the slow cooker to Low setting for 7-8 hours. Check for tenderness at 7 hours. If needed, continue to cook until the roast is tender to your liking.
  5. When the roast is tender, remove from the slow cooker and place on a platter. Pour the liquid from the slow cooker into a saucepan on the stove and bring to a boil.
  6. While the liquid is heating, mix together a slurry of 1-2 tablespoons of cornstarch and 2-3 tablespoons of cold water, stir into the liquid until the gravy is thickened to your liking.
  7. Serve with mashed potatoes or pasta, spoon gravy over slices of roast and potatoes.

  1. Lightly butter your slow cooker insert, place the vegetables in the bottom. Sprinkle with one packet of onion soup mix.
  2. Place the beef on the vegetables, sprinkle with the second packet of soup mix. Pour in the broth around the outside. Really just takes a cup of broth, gets the steam going.
  3. Cover and cook on Low setting for 8-10 hours. Check at 8 hours for tenderness. If fork tender, remove and serve, if not tender, continue cooking and checking each hour until tender, for local Thai beef, trust me, 9-10 hours and you will be happy with the results.
  4. If you would like to make an Au Jus dipping sauce, say for roast beef sandwiches, remove the beef and vegetables from the slow cooker and add a touch less than 1/4 cup Worcestershire and 1/4 to 1/2 teaspoon garlic powder to the slow cooker juices, mix well and serve in small bowls for dipping.

The beef would cost about 300 Baht for 1 1/2 kilo. For 6 servings, this is about $1.47 per serving.

  1. Let the roast come to room temp by sitting it on the counter for 30 minutes. Heat a large non stick pan on medium high heat and add the olive oil. Sprinkle the roast all over with 3 teaspoons of the kosher salt and the black pepper.
  2. Add the roast to the pan and sear on all sides, rotating the roast every 3 or 4 minutes to brown all sides of the roast. When the roast is browned, remove and place in your slow cooker.
  3. Add the remaining ingredients except the parsley. Cook on Low setting for 8 hours.
  4. To serve, remove the roast from the slow cooker and let rest 10 minutes. Slice across the grain, mashed potatoes, the veggies from the pot and gravy over the potatoes, garnish with fresh chopped parsley, sounds perfect.

For the beef, figure about 300 Baht/1 1/2 kilo roast. For 8 servings, this is about $1.10 per serving.

  2. During the last 3 hours, add the potatoes, carrots, and celery, if using, to the pot.

Figure a 2 kilo roast, or any large cuts of beef at 200 Baht/kilo. For 6 servings, this is about $1.96 per serving. Many times you may be able to get local raised beef for 150 Baht/kilo.

  2. While that is heating up, heat the left over roast beef up in a microwave then slice thinly. Toast the sandwich rolls to your liking.
  3. Pour the hot au jus in a bowl for dipping, load up a roll with roast beef and enjoy.

  1. Heat a splash of olive oil in a non stick pan on med heat, add the sliced onion and cook until translucent but not browned. Add the cooked onion to the beef stock, season with salt, pepper, and thyme.
  2. Place the roast in your slow cooker, pour the stock over the top of the roast. Cover and cook on Low setting for 8 hours or High setting for 4 hours. Leave the cover on, you want this to be falling apart beef!
  3. Preheat your oven to 180 C.
  4. Remove 3 cups of liquid from the slow cooker and add to a sauce pan. Heat on medium and bring to a boil, then reduce to a simmer and cook until reduced by half, about 10 minutes.
  5. Remove beef from the slow cooker and place on a plate and shred with a fork.
  6. Place the sandwich rolls on baking sheet and spoon meat on to the rolls, top each roll with Provolone cheese. Cover with foil and bake for 5 minutes or until the cheese is melted. Serve with the sauce on the side for dipping.
Recipe Notes

Beef will run from 150 to 200 baht/kilo. The cheese I do not have a price for, yet. When I make this I will give a much better estimate on the cost per serving. I will go with 300 Baht for the beef, and 100 Baht for the cheese. This comes out to about $1.50 per serving for 8 servings.

  1. Put roast in slow cooker, mix the soup mix in a cup of warm water first then pour on top of roast, then add water to cover roast plus 2 inches. Cook 6 to 7 hours on Low setting or 4 hours on High setting. When roast is cooked, shred it in the slow cooker. Add salt and pepper to taste.
  2. Add noodles, stir to combine and make sure all noodles get wet with water, add more warm water if needed. Cover and cook on High setting for 1 more hour. Check and stir occasionally so noodles don't stick. Serve with a side of your choice.
Recipe Notes

Beef will run about 150 to 200 Baht/kilo. Going with 200 Baht, this comes to about $1 per serving for 6 servings, for 8 servings, this is about 75 cents per serving. Excellent value.

Variations would be add sliced mushroom during the last 2 hours or so.
