  1. Preheat your oven to 180 C. Get out a casserole dish or a baking dish.
  2. Place everything in a pot on the stove, even a good shaking of Cajun seasoning, except the chicken. Heat to just about a simmer for about 5 minutes then remove from heat.
  3. While the pot is heating, place the thighs in the baking dish. Sprinkle some Cajun seasoning to your desired taste on the thighs. Pour the sauce contents from the pot over the chicken.
  4. Bake for about an hour or until the chicken is chicken is cooked through.
  5. Serve with mashed or boiled potatoes and a vegetable.
Recipe Notes

Going with 4 chicken thighs for 4 servings, this probably less than 70 Baht. For 4 servings, this is about 52 cents per serving.

  1. Whisk together the marinade ingredients in a bowl. Place the chopped beef in a zip lock bag. Pour the marinade into the bag, squeeze out as much as air you can, seal, and squish the beef around to coat with the marinade. Place the bag in the fridge for at least 8 hours to tenderize the beef.
  2. If using wood skewers, soak them in water for about 20 minutes while you prepare the vegetables. Drain the beef and skewer alternating the vegetable after each piece of beef.
  3. Prepare your grill for medium heat and grill the skewers, rotating them every 2 to 3 minutes, for about 8 to 10 minutes or to your level of doneness such as rare, medium or well. Remove from heat and let rest for 5 minutes, serve with sides of your choice.
Recipe Notes

The beef will cost about 200 Baht/kilo, for 1 1/2 kilos, 300 Baht. Figuring 1 skewer person, this is about $1.10 per serving.

  1. For those in Thailand, the big cities may have Pepper Jack cheese, for those not in the big cities (such as myself), use a mix of shredded Cheddar and Mozzarella and add a pinch of red pepper flakes, aka, Thai Chili Powder, which a is crushed type, not a powder.
  2. Preheat your oven to 180 C. Slice the rolls in half lengthwise, slice the entire package at one time, not individually. Place the bottom half in a 9x13 baking dish.
  3. Spread the chicken on the layer of rolls, then spread the BBQ sauce, then the onion, cheese, and parsley.
  4. Place the top layer of the rolls on the top, brush with melted butter. Bake for 20 minutes.
  5. Slice into individual sliders, serve, and watch your fingers!
Recipe Notes

The rolls at Tesco are 40 Baht, the chicken, maybe 50 Baht. Cheese I will estimate at 50 Baht. For 4 servings, this is about $1.03 per serving.

  1. Preheat your oven to 140 C. Line a baking sheet with foil.
  2. In a bowl, mix together the salt, black pepper, paprika, cayenne pepper, oregano, and brown sugar.
  3. Trim the ends of the strip of ribs to remove any odd or cartilage pieces, lay the strips on the baking sheet, cut the strips in half if needed. This is the type of ribs I use from Tesco.
  4. Season both sides of the ribs with the seasoning, arrange meaty side up, cover with another sheet of foil. Bake for 2 hours.
  5. Increase the oven temp to 200 C, carefully remove the foil covering the ribs, spread BBQ sauce evenly over the top of the ribs, place the long beans along the sides of the pan, season the long beans with salt.
  6. Bake for another 10 minutes. Cut the ribs into single bone pieces.
  7. Serve the ribs with the long beans, complete meal.
Recipe Notes

Pork ribs are about 115 Baht/kilo. 1 1/2 kilo would be about 173 Baht. For 4 servings, this is about $1.27 per serving, over all good price for a quality meal, after all, who does not like ribs.

  1. Preheat oven to 180 C. Heat the oil in a pan over high heat. Cook the chicken with salt, pepper, garlic powder, and chili powder for two to three minutes. Add the barbecue sauce and cook until the sauce has reduced by about half, about five minutes. Remove from heat.
  2. In a large baking dish, spread out two large handfuls of tortilla chips. Layer with half of the barbecue chicken, followed by half of the cheese, onion, tomato, bacon, and parsley. Repeat with the remaining ingredients. Bake for 15 minutes.
  3. Drizzle the sour cream and sprinkle the avocado on top. Serve.

  1. Mix the ground beef with some BBQ spice mix. Prep the Swiss cheese by cutting a block lengthwise so you have long strips about 1/2 inch on each side, make several long strips.
  2. Lay out your sushi mat so that you can roll it away from you. Lay out the strips of bacon sided by side, pointing away from you, and about 1 inch from the left and right sides and about an inch or so from the end that is farthest from you.
  3. Lay the ground beef on top of the bacon and pat down, maybe 1/2 inch thick, cover the bacon from the side closest to you and to the left and right, and stop at the end farthest from you, leaving about 2 inches of bacon visible. Form the edges tightly to make straight edges.
  4. About 2 inches from the side closest to you, place a cheese strip from left to right so that it goes from the edge of the beef to the other side.
  5. Use the mat to start a tight roll and roll it up. Repeat to make another roll. I am going to guess this would make two roll using a package of bacon and 500 grams of of beef.
  6. You can cook this on a preheated grill over indirect heat or on a rack your oven heated to 180 C. Place the rolls on the grill and cover with the lid and cook for 25 minutes.
  7. Remove the lid and brush on BBQ sauce of your choice. Cover and cook for 5 minutes, repeat, brushing one more time and cooking for another 5 minutes.
  8. Carefully remove the rolls from grill and set on a plate to rest for 5 minutes, then cut into thick slices with additional BBQ sauce on the side for dipping.

  1. These are the ribs I get at Tesco. Look for the strips that are meaty, remove the distorted bones on the ends and save for a soup if you wish, and just go with the nice straight bones. The bones are only about 3 inches long.
  2. Remove silver skin from the back of the ribs if that is present. Cut the ribs into 3 bone sections, sprinkle generously with salt and pepper and place in the slow cooker.
  3. Pour the root beer into the slow cooker, cover, and cook on Low setting for 5 hours, do not remove the cover.
  4. Check the ribs at 5 hours, if very tender, you are almost done, if not tender, continue cooking and checking each hour. Once the ribs are tender, carefully remove from the pot and set on a foil lined baking sheet.
  5. Brush the ribs with BBQ sauce and broil for a few minutes, charring a bit is ok, then flip the ribs over, brush more sauce, and broil for a few more minutes, again, a bit of char is ok. Remove to a serving tray, sprinkle some thinly sliced spring onion on, and serve.

  1. Preheat oven to 190 C. Coat 9x9 baking dish with lightly with butter. In a large bowl, combine beef, onion, breadcrumbs, BBQ sauce, egg, chili powder, and salt until well mixed. Gently press into bottom of baking dish.
  2. Bake uncovered for 20 to 25 minutes, or until cooked through. Remove from oven and carefully pour off any excess fat if needed.
  3. Adjust oven temperature to broil and place oven rack 6 to 8 inches from heat source. If using a counter top oven like me, switch to the top coil only and leave the rack in the center.
  4. While the beef is cooking, boil the potatoes until tender, skin on or off is up to you. Once the potatoes are done, remove from heat, same pot, add the milk, butter, parsley, and garlic powder, mash with a potato masher until smooth. Stir in bacon. Spread evenly on top of beef mixture and sprinkle with cheese.
  5. Broil for 3-5 minutes or until the cheese is lightly browned. Serve with a vegetable on the side for a nice meal.

Figure about 100 Baht/500 grams of beef. For 4 servings, this is about 74 cents per serving.
