  1. Peel the banana and place in a bowl, add the oats, and any dried fruit. Using your hands mix everything together.
  2. For oven baking, just drop by spoonfuls to make about 12 cookies, slightly flatten them down, back for about 15-20 minutes or until slightly golden brown.
  3. For microwave cooking, shape spoonfuls into flat cookie circles and cook for 30 seconds to 1 minute, making sure they do not burn.

  1. In a small bowl, mash the banana with a fork. Crack in the two eggs and whisk into the banana. Heat a pan with a splash of olive oil, pour the mixture in making 2-3 smaller pancakes (or more, smaller is easier to flip). When golden brown on the bottom, flip. Remove to a place when the other side is also golden brown.

  1. Preheat your oven to 180 C.
  2. Cream together sugars and butter. Mix in eggs and vanilla, then mix in the mashed bananas. Mix in flour until moist, then mix in baking soda. Pour this into a bread pan and bake for 1 hour or until a toothpick inserted in the center comes out clean.
