    Personal Pizza Galette

    Personal Pizza Galette

Just a Pinch Recipe Club, Chef Andy Anderson, United States.
Now your first question is probably what is a galette. A galette is basically a free form crust, pastry dough for a fruit tart and pizza dough for our pizza. The edges are partially folded over the filling, or with our pizza, the toppings. This recipe comes from a good friend who is a Chef and this is his creation. The toppings listed here is what the Chef used, feel free to use toppings of your choice. Links to the Shortcuts are listed in the Recipe Notes section.

    Equipment

    • Baking Sheet
    • Foil
    • Oven

    Ingredients

    • 1 pizza dough recipe, your choice, ready made is fine, Shortcut
    • 170 grams bulk Italian sausage, (6 oz), Shortcut
    • 4 slices Canadian bacon
    • 3 slices Provolone cheese
    • 10-12 slices Pepperoni
    • ½ cup pizza sauce, Shortcut
    • 2 tablespoons Parmesan cheese, grated
    • 85 grams Mozzarella Cheese, shredded, (3 oz)
    • olive oil, as needed
    • dried oregano, as needed

    Instructions

    • Heat a non stick pan then cook the sausage until just cooked through, breaking it up with your spatula, drain the fat and place on paper towels.
    • While the sausage is cooking, prep and get all the remaining ingredients. Preheat your oven to 220° C (425° F). Line a baking sheet with foil.
    • On the prepared baking sheet, lightly floured, roll out the dough to about an 8 inch circle, we're not looking for precision or a perfect circle here, just eyeball it. Lightly brush the dough with some olive oil.
    • Starting in the center of the dough, add the pizza sauce and spread into a 6 inch circle. The extra dough, we'll get to that in a few minutes.
    • Place the Italian sausage on the pizza sauce.
    • Place the Provolone cheese on the sausage.
    • Place the Canadian bacon on top of the cheese.
    • Add the Parmesan cheese on top of the Canadian bacon.
    • Add the Mozzarella cheese then the Parmesan cheese, followed by the pepperoni.
    • Now for that extra dough, take a knife and cut the dough from the edge of the pizza sauce out to the edge about every 2 inches, so it looks like spokes on a bike wheel.
    • Fold the extra dough over the pizza fillings, brush with olive oil and sprinkle with some dried oregano.
    • Place the pizza galette on the prepared baking sheet and bake for 12-18 minutes, goal is cheese lightly browned and bubbly.
    • Remove from the oven, slice, and serve.

    Notes

Overall, even though with the cheeses used, this is low cost per serving, and it sounds mouth watering, so cost is not really a factor for this recipe.

    Brian's Great Pizza Dough

    Prep Time 20 minutes
Total Time 1 hour 20 minutes
    Cuisine American
Servings 4 8 inch pizza crusts

    Ingredients

    • teaspoons yeast
    • 1 teaspoon honey
    • 1 cup lukewarm water, (¼ cup plus ¾ cup divided)
    • 1 teaspoon salt
    • 1 tablespoon olive oil, plus as needed
    • 3 cups bread flour, use per the instructions

    Instructions

    • In a medium bowl, add yeast, honey and ¼ cup of the lukewarm water and stir. Let this sit for 10 minutes.
    • Add the salt, 1 tablespoon of olive oil, and 1 cup of the flour and ¾ cup of the lukewarm water, stir with a wooden spoon.
    • Now add another 1 cup of flour, stir with a wooden spoon or with floured hands.
    • Now add another ½ of the flour and mix in until a sticky ball of dough forms, add additional flour as needed, 1 tablespoon at a time.
    • Once a sticky ball has formed, remove from the bowl and place on a floured surface.
    • Kneed for 5 minutes adding flour as needed to have a have a surface on the dough that is a bit tacky.
    • Form a dough ball and place dough in bowl with olive oil, roll ball in olive oil to cover surface, cover with cloth and let rise for 30-40 minutes
    • Deflate the dough and turn out onto a lightly floured surface, cut the ball into 4 pieces and form each piece into a ball.
    • Cover with a damp cloth and let rise for another 20-30 minutes.
    • Now you can use immediately or wrap balls separately in plastic wrap and store in the fridge until use.
    • Each ball will make one 8 inch pizza. If you want larger pizzas, adjust the number of balls accordingly.
    • Use your preferred method for preparing the crust.

    Servings 1 12 inch pizza

    Equipment

    • Pizza Pan (12 inch)
    • Oven

    Ingredients

    • olive oil
    • 2 cups Mozzarella Cheese, shredded
    • 1 cup ham, diced
    • 5 eggs
    • black pepper, as desired
    • fresh parsley, finely chopped

    For the Crust

    • 1 cup all purpose flour
    • ¼ teaspoon instant yeast
    • teaspoon salt
    • cup water
    • ½ teaspoon Italian seasoning, optional, Shortcut

    Instructions

    • Preheat your oven to 220° C (425° F). Oil a baking sheet or pizza pan with olive oil.
    • Make the crust by adding the flour into a large mixing bowl. Add the salt and dried Italian seasoning/herbs of your choice (if using) and yeast, whisk to combine. Make a well in the center of the flour and pour in the water. Use your fingers or a wooden spoon to combine everything together. When it comes together into a cohesive ball, turn it out onto the lightly floured counter along with any extra flour in the bowl that hasn’t yet gotten worked in.
    • Knead the dough until all the flour is incorporated and the dough is smooth/elastic to the touch, about five minutes. The dough should still feel moist and just slightly tacky. If it’s sticking to your hands and counter top like bubble gum, work in more flour one tablespoon at a time until it’s smooth and silky.
    • Place the ball of dough in the center of your pizza pan or baking sheet. Use the heels of your hands and working from the middle gently press the dough outward until it’s about ¼ of an inch thick or less, while rotating the pan. You can also use a rolling pin for this part.
    • Spread some olive oil on the dough, place in the oven for 5 minutes, then remove.
    • Now add the cheese evenly over the top, then the ham, then crack the eggs onto the pizza, season with black pepper.
    • Into the oven again and bake this time until the crust is golden brown and the eggs set but yolks still a little soft, about 15 minutes. (Keep an eye on it, no one likes a burn breakfast pizza 😉 and all ovens are different.)
    • Remove from the oven, sprinkle with fresh chopped parsley, slice, and serve.

    Low cost.
