Ok, after the Gyros I recipe, I figured out how to say this, is it "Year O". This does sound good as well and is just a variant. This is not traditional by any means as lamb is not used, but you are free to use that if you wish. This can be pork, beef, pork and beef, chicken, chicken and beef, chicken and pork. The original recipe stated lamb and turkey, lamb and turkey is costly but feel free to use that if you wish. Beef will be costly, chicken the least costly. This makes a smaller amount than the Gyros I recipe.

Ingredients
  

Meat

  • 250 grams ground beef, OR minced pork
  • 250 grams ground chicken, OR just use 500 grams of ground chicken
  • 2 teaspoons dried oregano
  • 1 teaspoon paprika
  • 1/2 cup onion, sliced
  • 3 cloves garlic, smashed and minced
  • juice from 1 lemon

Sauce

  • 1 cucumber, small, peeled, seeded, and chopped
  • 1 cup plain yogurt
  • 1 tablespoon olive oil
  • 3 cloves garlic, smashed and minced
  • 2 tablespoons fresh mint, chopped
  • juice from 1 lemon

To serve

  • Pita bread, OR corn or flour tortillas
  • lettuce, shredded
  • tomatoes, optional, chopped
  • Feta cheese, optional, crumbled
  • olives, optional

Instructions
 

  • Slice the onion and the mince the garlic, place in the bottom of your slow cooker. In a bowl mix the 2 types of meat (or just chicken) with the oregano and paprika.
  • Form the meat into a meatloaf and place on top of the onions in the slow cooker. Cook, covered, on Low setting for 3 to 4 hours or High setting for 2 hours. Use of a meat thermometer would be good to check the internal temp.
  • While the slow cooker is started, prepare your sauce. Just mix the sauce ingredients together in a small bowl, cover and refrigerate until the meat is done.
  • When the meat is done, carefully lift this out of the pot and place on a cutting board and let it rest for about 5 minutes. Slice thinly and serve in tortillas (or pita bread) with the sauce and the desired optional fixings. Enjoy.

Notes

Ground beef will run about 50 Baht (that is a guess since I do not have that here), minced pork would be about 30 Baht/250 grams, and chicken about 20 Baht/250 grams (another guess). The costly item is the flour tortillas, store bought is about 230 Baht for a pack of 10 (I need to learn how to make these!) Using the beef price and chicken and the tortillas, and figuring 4 servings and roughly half the tortillas, this is about $1.40 per serving, it goes down with pork, and chicken, and if using chicken only (which sounds really good) this would be under $1 per serving.

Instructions
 

  • Place onion and garlic into your slow cooker. Mix together meat and Greek seasoning. Form into two small loaves and place on top of onions and garlic. Cook on Low setting for 4-5 hours or until done, use of a meat thermometer would be a bonus here.
  • While the slow cooker is started, prepare your sauce. Just mix the sauce ingredients together in a small bowl, cover and refrigerate until the meat is done.
  • When the meat is done, carefully lift this out of the pot and place on a cutting board and let it rest for about 5 minutes.
  • Slice the meat thin and serve on tortillas with shredded lettuce and the sauce. Enjoy.

Notes

Ground beef will run about 100 Baht (that is a guess since I do not have that here), minced pork would be about 60 Baht/500 grams, and chicken about 40 Baht/500 grams (another guess). The costly item is the flour tortillas, store bought is about 230 Baht for a pack of 10 (I need to learn how to make these!) Ingredients
  

  • 1 kilo beef roast, OR any cut of beef
  • 1 packet dry onion soup mix, OR make from a shorcut
  • 250-500 grams egg noodles, OR go with Fettuccine
  • salt and black pepper, to taste

Instructions
 

  • Put roast in slow cooker, mix the soup mix in a cup of warm water first then pour on top of roast, then add water to cover roast plus 2 inches. Cook 6 to 7 hours on Low setting or 4 hours on High setting. When roast is cooked, shred it in the slow cooker. Add salt and pepper to taste.
  • Add noodles, stir to combine and make sure all noodles get wet with water, add more warm water if needed. Cover and cook on High setting for 1 more hour. Check and stir occasionally so noodles don't stick. Serve with a side of your choice.

Notes

Beef will run about 150 to 200 Baht/kilo. Going with 200 Baht, this comes to about $1 per serving for 6 servings, for 8 servings, this is about 75 cents per serving. Excellent value.
Variations would be add sliced mushroom during the last 2 hours or so.

Ingredients
  

  • 1 boneless chuck roast, about 1 1/2 to 2 kilos
  • 1/4 cup all purpose flour
  • salt and black pepper, to taste
  • 3 tablespoons canola or vegetable oil
  • 4 tablespoons butter
  • 10 fresh pepperonico peppers, OR use fresh banana peppers
  • 2 tablespoons mayo
  • 2 teaspoons cider vinegar
  • 1/4 teaspoon dried dill
  • 1/8 teaspoon paprika
  • fresh parsley, for garnish

Instructions
 

  • Dredge the chuck roast in flour, salt, and pepper to taste, and massage it into the meat.
  • In a skillet on a very high heat, brown the meat on all sides in the canola oil to create a crust.
  • Transfer the meat to a Crock-Pot and top with butter and pepperoncini. Cover the slow cooker and set it to Low setting.
  • In a small bowl, mix the mayonnaise, vinegar, dill, and paprika until well combined, open the slow cooker and spread this over the meat, cover, and cook on low for 8 hours.
  • Remove the roast and shred with two forks, then return the meat to the slow cooker, and stir to mix in the juices. Serve garnished with fresh parsley, and sides of your choice.

Notes

Beef will run about 150 Baht/kilo, large cities should be able to get a chuck roast, out of the way places, like where I am at, I will try this with just 1-2 large chunks of beef. 300 Baht for 2 kilos would be about $1.47 per serving.

This comes from a good friend, and this recipe has been featured in "Louisiana Cookin" Magazine and it is that good. This recipe calls for a tri-tip roast, but Fred assures me, any cut of beef will work. I made this on 11 May 2016, excellent. My comments below. Ingredients
  

  • 1 1/2-2 kilo tri-tip roast, OR any cut of beef
  • 8 red potatoes, small to medium in size, diced
  • 2-4 cloves garlic, smashed and minced
  • 1 large onion, chopped
  • 1 packet dry onion soup mix, OR make from a shortcut on this site
  • 1 3/4 cups beef stock, use fresh or from the powder
  • 1/2 cup red or white wine
  • 2 tablespoons Worcherstershire sauce
  • 2 bay leaves
  • Cajun spice mix, OR make from a shortcut on this site, this is to rub the roast

Instructions
 

  • Rub the roast on all sides with Cajun spice mix, or herbs of your choice, and place the roast, covered, in the refrigerator for at least an hour or up to overnight to allow the beef to absorb the spices.
  • After the marinating time, placed the diced potatoes, onion, and half the garlic in the bottom of your slow cooker and mix together. Set the roast on top of the potato mixture.
  • In a large bowl, mix together the dry onion soup packet, bay leaves, beef stock, wine, and Worcestershire sauce. Pour the liquid mixture over the roast. Sprinkle on remaining minced garlic on the roast and potato mixture.
  • Cook on Low setting for 7 1/2 to 8 hours, serve with your choice of sides.

Notes

Beef will run about 150 Baht/kilo, a 2 kilo roast would be 300 Baht, everything else in minimal. This comes out to about $1.10 per serving for 8 servings, very reasonable.

Ingredients
  

  • 4-6 patties lean ground beef, OR minced pork, OR ground chicken
  • 1 tablespoon steak seasoning, OR you can make from a shortcut listed on this site, see Step 1
  • 1 onion, diced
  • 1 package button mushrooms, sliced
  • 1/4 cup all purpose flour
  • 1 1/2 cups beef stock, use fresh or from powder

Instructions
 

  • Place a layer of formed patties on the bottom of the slow cooker. Sprinkle on some steak seasoning. Add a layer of sliced mushrooms. Repeat adding the next layer of patties, steak seasoning, and mushrooms. Note about the steak seasoning, you can use steak seasoning, or you can just season the patties with salt, pepper, garlic powder, a pinch of paprika, and a pinch of ground coriander.
  • Mix the onions and flour in the beef stock, pour that into the pot. Cover and cook on Low setting for 6-8 hours. Serve with mashed potatoes and a vegetable for a complete meal.

Notes

Beef will run between 150 to 200 Baht/kilo. If you cannot find ground beef, get a large chunk and mince yourself. Or you can use minced pork or even chicken would would work, but for chicken, use chicken stock instead of beef stock. 500 grams of meat should make 4 nice patties, 1 kilo of meat should make 8 patties. Make 6 equal size patties from a kilo of meat and call it good. Going with 200 Baht/kilo, and 6 patties, comes in at right about $1 per meal for 6 people. All other ingredients are minimal.

Slow Cooker Beef and Gravy I

This is an easy recipe much like the slow cooker Easy Pot Roast recipe listed on this site. Use the shortcuts stated and you make make this dish for less than what you think. Links to the shortcuts are listed in the Recipe Notes section.

Ingredients
  

  • 1 kilo beef, any cut, such as a roast, stew beef, large chucnk from a market, you get the idea
  • ground black pepper, OR lemon pepper would be good as well
  • 1 packet onion soup mix, OR make from a shortcut
  • 1 can condensed cream of mushroom soup, OR make from a shortcut
  • 1 3/4 cups beef stock, make from the powder
  • 2 tablespoons butter, optional, see Step 4
  • 3 tablespoons flour, optional, see Step 4

Instructions
 

  • In your slow cooker, add the soup, beef stock, and dry onion soup mix, whisk to mix, lumps are ok, they will work out when it cooks.
  • Cut beef into about 1 1/2 inch cubes. Sprinkle beef with ground black pepper or lemon pepper if you have that. Add the beef to the slow cooker and stir to get everything mixed.
  • Cover and cook on low for at least 6-8 hours. Check at 6 hours, beef should be tender.
  • Now, you can serve this up just as it is when it is ready. But if a thicker gravy is desired it couldn't be any easier to make. First, remove the beef from the slow cooker, draining the liquid into the slow cooker. Melt the butter in a small sauce pan, then add 3 heaping tablespoons of flour, whisk together until it turns a light golden color, then add 2 cups of the liquid from the slow cooker. Whisk this until smooth, whisking continuously, then increase heat and it will start to thicken, when you have the right consistency, remove from the heat and pour into the slow cooker, mix, then add the beef and mix to coat the beef.
  • Serve over rice, mashed or boiled potatoes, or egg noodles. A vegetable on the side makes this a complete meal.

Notes

Beef will cost about 200 Baht/kilo. Just go with a large chunk from an open market, the slow cooker takes care of the tenderness. Use the shortcuts listed for a big savings on the other ingredients. For 4 people, the cost is about $1.50 per meal, for 6 people, the cost is about $1 per meal. If you can locate a local farmer that slaughters their own beef, you can normally get beef for a bit less than 200 Baht/kilo.
Variant: Add fresh mushroom at about the last 30 minutes of cooking.

Easy Beef Pot Roast

This is cooked in a slow cooker with soup and one onion for a easy meal. The soup makes a great gravy for boiled or mashed potatoes. I make this from local raised beef right here in the village. Ingredients
  

  • 1 kilo beef, any large chunk or chunks will work
  • 1 can condensed cream of mushroom soup, (Shortcut)
  • 3/4 cup water
  • 1 onion, quartered
  • ground black pepper, to taste
  • garlic powder, to taste
  • potatoes, boiled or mashed, up to you
  • 1 bay leaf

Instructions
 

  • Trim any large pieces of fat from the beef chunks and place in the slow cooker.
  • Mix the soup and water in a bowl, add an ample shaking of ground black pepper and garlic powder, mix well. Pour this into the slow cooker. Place the quartered onion and bay leaf into the soup mixture. Put lid on the slow cooker.
  • Turn on slow cooker to High for 1 hour then reduce to Low for 8 more hours. Leave the lid on, no need to look at it! At the 8 hour mark, try the tenderness, it should fall apart with a fork, if not, keep it on Low for several more hours until fork tender.
  • Serve with a boiled potato or mashed potatoes with the soup mixture spooned on for gravy.

Notes

The beef cost me 150 baht, the soup was 42 baht and has lasted me 4 days, costing $1.42 per serving. Make the soup from the shortcut for more savings.
